It's still al fresco dinner time in Texas, and I'm taking advantage of it. I have a new Camellia tree planted in the corner behind my waterfall and I hope it does well. My little Le Creuset pumpkin always comes out in the Fall and comes in handy.
These watercolor pumpkin bowls by Maxcera that I've had for years, also get put to good use.
My favorite lady head vase that resides on my kitchen sink ledge is bedecked with one lonely rose that survived out of a dozen, and some chrysanthemums

Pumpkin Chili
I've seen recipes for pumpkin chili and decided to make up my own recipe, and I loved it. If I say, "Mmmm" when I taste, then to me, it's good. If you have some leftover chili, put on top of a baked potato, for another meal, and top with shredded cheese and sour cream.
Ingredients
- 1 pound ground beef or ground turkey
- 1/2 of an onion, or more, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon ground chipotle chile pepper
- dash cayenne
- 1/2 of a 12 oz can of pumpkin (freeze the remainder for another use)
- 1- 14.5 oz can fire roasted tomatoes with juice
- 1-14.5 oz can diced tomatoes with juice
- 1-16 oz can kidney beans, or use pinto, or black beans, drained
- 2 cups beef broth (I used 2 teaspoons of Better Than Bouillon Beef Base and 2 cups water)
Instructions
- Brown the ground beef with the onion; add the minced garlic cloves, the bell pepper, the spices and the pumpkin and scrape the bottom of the pot.
- Add the cans of tomatoes, the drained beans of choice, and the beef broth and bring to a boil, then turn down to a simmer and cook for several hours.
- Top with shredded cheese and sour cream.
Notes
You could do all this in a slow cooker, after browning the beef and cooking the onion, and set on low for several hours.
It was another busy week with Ella in the top left, and in the right with her sister, Avery.Middle row is a pep rally that Molly got to dance with Cissy and I got to watch and enjoy the fun.Bottom row is Avery at her last home game doing one of her many digs, and then on the right is her support club. It's so cold in their auditorium that I have to wear socks, jeans, and a heavy duty zip-up sweatshirt to keep warm.

ReplyDeleteI've never heard of pumpkin chili. Sounds very interesting! I love the bowl it is in - those hand painted ones are just so sweet! So happy you've had great outdoor dining weather. We ate outdoors last night for our pumpkin carving party - but later that night it got super cold and even my bird bath water froze solid! It warmed up a bit more today. But the last remains of that unseasonably warm stuff we had last week is gone for the rest of the year I am afraid. Hope you enjoy many nice hours outdoors, sweet lady.
