Sausage with Orecchiette Pasta and a Miracle




It's dinner alfresco tonight since it's still warm here. 

I'm still recycling flowers that I bought, and love the bell flowers on a stem.  My cross stitched Autumn  piece is looking so pretty with the setting sun hitting it.  


This sausage and pasta is an easy skillet dinner.  I had some orecchiette pasta in my pantry and wanted to use it.  It's such a chewy pasta and does take more cooking time than some other pastas, but it's so good!

Sausage and Orecchiette Pasta

Sausage and Orecchiette Pasta

This is a great skillet meal and so flavorful. I changed the recipe by doubling the meat and making some other changes.

Ingredients

  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • salt to taste
  • 1 garlic clove, minced
  • 1 pound Italian sausages, casings removed (I used hot sausage)
  • 2 cups low-sodium chicken broth (you may need a little more if you increase the pasta amount)
  • 1 and 1/2 -1 and 3/4 cups orecchiette pasta, or more to taste
  • 1/2 cup roughly chopped arugula, or to taste
  • 1/4 cup finely grated Parmigiano-Reggiano cheese, or to taste

Instructions

  1. Heat olive oil in a large, deep skillet over medium heat. Add onion with a pinch of salt; cook and stir until onion has softened and turned translucent, about 5 minutes. Add the minced garlic and cook about 30 seconds. Stir in sausage and cook until browned, 5 to 7 minutes.
  2. Pour 2 cups chicken broth into sausage mixture and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon.
  3. Add orecchiette pasta; cook and stir pasta in hot broth until pasta is cooked through and most of the broth is absorbed, about 15 minutes. You may have to add more broth if needed. I did not need to add more broth.
  4. Stir arugula into sausage-pasta mixture until arugula wilts.
  5. Ladle pasta into bowls and sprinkle with Parmigiano-Reggiano cheese.

Notes

I think spinach would be a good substitute for the arugula.







My beautiful granddaughter, Cissy, was in a car accident on  Friday, 9-27-24.  My daughter had recently moved out in the country and they live 45 minutes from where the high school that my daughter works at, and where Cissy is a senior.  Cissy has to leave extra early for cheerleading and she needed gas and took a different route.  There are some sharp curves and she ended up rolling the car, climbed out through the windshield and was walking around, most likely dazed, and a pastor found her, called Molly and an ambulance. There were no other cars involved.  Molly got to the scene and was able to drive with her in the ambulance.  She was checked out and did get stitches in her knee, had a bump on the back of her head, and a few broken bones in her back that they said would heal.  My daughter has raised strong, wonderful kids, I must say.   We will forever be thankful to God for letting us realize that miracles do exist and Cissy is living proof.  Cissy went back to school the following Monday after the accident.



Cissy's Senior Night was this past week, and even though she cannot do any lifts, jumps, etc., she was able to dress out and do easy cheers.  The top left photo is Cissy with her parents, and her stepdad.  In the top right photo, she was named Cheerleader of the Week; next row is a picture of all the senior girls with their bouquets; right is Cissy with her brothers, Caiden and Connor (Riley is in the army in South Korea); next row is Cissy with her fans, Uncle Mike, me, Caiden, Connor, Molly, and Eric; bottom is Molly with Cissy's cut-out photo that all the moms had made of their girls when they were little, and then on the right is Cissy recreating that image.  Thank you, Our Lord and Saviour, for giving us the gift of Cissy and her miracle.

  1. A hearty meal and a heartfelt story with a miraculous ending, Kitty. Thank God the minister found Cissy and called Molly! I didn't realize she had back fractures. It's amazing how she already has rebounded. Fantastic family photos!

  12. Oh, dear friend! This is just awful to hear of Cissy's accident. I am just now getting to read your post. Bless your heart. I cannot imagine how scary it was for all of you. A few broken bones in her back sounds just awful and so very painful. What a clear demonstration of the mercies of the Lord that she was able to walk away without worse injuries. I know it was our sweet Lord looking out for her. Sending love and hugs to all of you today.

  17. Oh my goodness, what a scare for Cissy and her entire family! She is truly blessed that she was severly injured or worse! To think of her crawling out of the car through the broken windshield and the pastor finding her is truly a miracle. ♥
