We had an early Thanksgiving potluck.
An instructor at my fitness club opened her home to the senior members and we were supposed to bring a dish from our country, or one that our family loved. I chose to bring buckeyes and lucky for me the Ohio State Buckeyes, my alma mater, won their game against Penn State 20-13! I took a jar of real buckeyes that my beloved dad collected for me probably 45+ years ago, just so that people could see what the real nut looked like. The buckeye tree is Ohio's official state tree, and the buckeye nut is the official mascot of OSU. The real buckeye is actually poisonous, but the candy buckeye is absolutely delicious!

Buckeyes
These are so good!
Ingredients
- Candy:
- 4 cups powdered sugar
- 1 stick butter or margarine, softened
- 1 1/2 cups peanut butter
- 1 t. vanilla
- Coating:
- Chocolate almond bark, candiquik, candy melts or 12 ounces of chocolate chips
Instructions
- Mix candy ingredients together until smooth. I do this in my mixer. The mix will look kind of like wet sand, but will stick together when you work with it. Form the peanut butter mixture into balls, and place on wax or parchment paper, and onto a cookie sheet. You can now put these in the freezer for about 30 minutes to get really cold. You also can put them in the fridge to do later.
- Melt the chocolate; I do this in the microwave and in a slender microwave safe mug or glass, which makes it easier for dipping. I keep the melted chocolate in a bowl of warm water, being careful of not getting any water into the chocolate. This way the chocolate stays smooth. Use a toothpick and dip the buckeye into the chocolate, leaving a space at the top to resemble a real buckeye. You may find that using a fork underneath and dipping the ball into the chocolate is easier. Place back onto wax or parchment paper to firm up. You can use your clean finger or an offset spatula to smooth the hole from the toothpick.
- Store in the refrigerator.
Notes
If the peanut butter balls start to warm up before you're finished dipping, place them back in the fridge or freezer for a bit. It's so much easier to dip cold peanut butter balls.
You may need to add a tiny bit of oil if using chocolate chips.

ReplyDeleteWhoo hoo!!! GO BUCKS!!!! What a game, eh?? This Columbus based gal loves Buckeyes and they aren't easy to make but soooooo worth it. And I am gobsmacked at Mike's artistry. I can barely carve two triangle eyes and a slitted mouth on pumpkins. He is INCREDIBLE to be able to do that. WOW!!
