Nantucket Cranberry Pie


Hopefully you have a bag of cranberries leftover. 

I try to buy extra bags of cranberries to put in the freezer, and this dessert proves that it's a good thing.  



This darling, favorite, wintry chickadee teacup came from a dear friend several years ago.  Whenever I use gifts from friends, they are thought of and prayed for.  Cranberry orange tea is in my teacup, and a perfect accompaniment for the dessert.  Pine cones with a mini strand of timered lights are in a very old wooden bowl I bought when my mom and I were thrifting years ago.



More chickadees are hanging around in my house and outside at my bird feeders.



Isn't this chickadee towel the cutest gift?  Chickadees are my favorite with their sweet song and how cute they are.

Some dear online blogging friends are reading this book for this year.  It is a beautiful, peaceful book.



This is a quick and easy dessert.  You could serve it with ice cream, whipped cream, creme fraiche, or plain like I did.

Nantucket Cranberry Pie

Nantucket Cranberry Pie

This recipe is called a pie, but is actually a cake, and it is so easy to put together. It is sweet and tart, and the perfect ending to a meal, but could also be used for breakfast or brunch.

Ingredients

  • Chopped cranberries to measure 2 cups (I did a quick chop in my mini chopper)
  • 1/2 cup of chopped walnuts
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 cup melted butter
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In the bottom of a 10" pie plate or a springform pan, place the chopped cranberries, walnuts and 1/2 cup sugar.
  3. Mix eggs, melted butter, 1 cup sugar, flour and almond extract. Stir until smooth.
  4. Pour over the cranberry-walnut-sugar mixture and bake for 40 minutes.

Notes

I think I would try some orange zest the next time in the batter.





Harper and Hayden didn't have school last Monday, and I went to be with them while their parents worked.  We decorated this cute mushroom gingerbread house kit that I had bought,  we went to the Dollar 
Tree, had lunch at the Taco Joint (yes, that's the name!), and had the best time together.

  1. The recipe sounds yummy! I love cranberries and grew up near where the Ocean Spray company started. We used to go to the cranberry bogs to catch bullfrogs when I was a kid. I wouldn't touch one now, though. Lol! I was a little Tomboy :)

  2. That recipe sounds yummy! Funny but I don't think I've ever seen that on any menu around here... even on Nantucket. We used to visit the Ocean Spray bogs each summer when we were on Cape Cod and I thought I had tried most cranberry recipes out there. We'll have to add this one to our list.

  5. Kitty, I noticed your photo shows the cranberry-nut layer on top of the cake. Did you just flip it over onto a plate before cutting to serve? Just curious.

  7. Yummy Kitty and yes I do have a bag of cranberries in the freezer as we speak so this will be a no brainer for me to make for my ladies Bible study. Love your Psalms devotion book and how sweet are Hayden and Harper? What fun you must of had with them at the Taco Joint. Sounds interesting to me. I love Taco John's but it appears they are slowly going out of business and I love their Taco burger. Guess I have to make my own....which somehow never tastes quite the same.   12. What a cozy winter tea vignette with that yummy cranberry cake. Cranberries are so refreshing and I love their tartness mixed with sweet. The festive fungi gingerbread kit came out great! A nice way to spend the day with your adorable granddaughters too.

  15. I had my very first cranberry pie this past Thanksgiving. I loved it so much more than I thought I would, too. TY for sharing this recipe. We always have dried cranberries in the fridge cuz we both love them all year - I make cranberry orange baking - so it is a true fav. May have to try your pie recipe!! And H and H are soooo adorable. Gracious they're growing too fast.

  21. Kitty, love seeing all the chickadees! I bought a MKC beaded chickadee pillow on the after Christmas sale. It's brightening my kitchen sitting room. Chickadees are some of my favorites. I've been nibbling on a delicious cranberry bread/cake a friend brought over yesterday. It's a perfect treat with tea or coffee. Happy New Year!
