Happy New Year, Friends! I am sharing one of my all-time favorite cookies, and one of my top three. My other favorites are: Peanut Butter Jumbos and Oatmeal Raisin Cookies.
When I bite into one of these delectable cookies, my eyes close, and I am in heavenly bliss. I've made both versions for us. Would you be on team powdered sugar or team coconut? My son Mike even told me that he can't get enough of them.
My first teacup so sip from is this Royal Albert Snowdrops Flower of the Month.
My little sledders that my dear Dad gave to me, always make an appearance in January. They're sledding on my snowy white crocheted tablecloth. Aren't their faces the cutest ever?
Yield: about 36

Date Skillet Cookies
I probably got this recipe when I used to clip from The Columbus Dispatch or The Columbus Citizen Journal, when newspapers had a recipe section.
Ingredients
- 1 stick of butter
- 1 (8-ounce) package of dates, chopped
- 1 cup sugar
- 2 eggs, well beaten
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 2 cups Rice Krispies
- 1 cup chopped pecans
- coconut or powdered sugar for coating
Instructions
- Using a heavy skillet, place butter, dates, sugar, eggs, and salt over low heat and cook for 15 minutes, stirring constantly.
- Remove from heat and add vanilla, Rice Krispies, and nuts, and mix well.
- When the mixture is cool enough to handle, but still warm, roll into small balls, and then roll into powdered sugar or coconut flakes, and let cool on wax or parchment paper.
- Store in the fridge.
- Be prepared to bite into heavenly bliss!
My last Christmas celebration took place with the family that was back and those that could come. At the top left, Harper and Hayden decorated Oreo cookies to look like ornaments; top right are the older girls, Cissy, Avery and Ella. Middle photo was after the Saran Wrap Ball game which was a lot of fun. Bottom is left to right, Kristen, Harper, Kevin, Hayden, me, Molly, Cissy in the back, Ella, Tim in the back, Julie and Avery. I am so thankful for these beautiful people in my life.

As for the date cookies, I would be team powdered sugar but could also be convinced to join the team coconut too!
