Nantucket Cranberry Pie


Hopefully you have a bag of cranberries leftover. 

I try to buy extra bags of cranberries to put in the freezer, and this dessert proves that it's a good thing.  



This darling, favorite, wintry chickadee teacup came from a dear friend several years ago.  Whenever I use gifts from friends, they are thought of and prayed for.  Cranberry orange tea is in my teacup, and a perfect accompaniment for the dessert.  Pine cones with a mini strand of timered lights are in a very old wooden bowl I bought when my mom and I were thrifting years ago.



More chickadees are hanging around in my house and outside at my bird feeders.



Isn't this chickadee towel the cutest gift?  Chickadees are my favorite with their sweet song and how cute they are.

Some dear online blogging friends are reading this book for this year.  It is a beautiful, peaceful book.



This is a quick and easy dessert.  You could serve it with ice cream, whipped cream, creme fraiche, or plain like I did.

Nantucket Cranberry Pie

Nantucket Cranberry Pie

This recipe is called a pie, but is actually a cake, and it is so easy to put together. It is sweet and tart, and the perfect ending to a meal, but could also be used for breakfast or brunch.

Ingredients

  • Chopped cranberries to measure 2 cups (I did a quick chop in my mini chopper)
  • 1/2 cup of chopped walnuts
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 cup melted butter
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In the bottom of a 10" pie plate or a springform pan, place the chopped cranberries, walnuts and 1/2 cup sugar.
  3. Mix eggs, melted butter, 1 cup sugar, flour and almond extract. Stir until smooth.
  4. Pour over the cranberry-walnut-sugar mixture and bake for 40 minutes.

Notes

I think I would try some orange zest the next time in the batter.





Harper and Hayden didn't have school last Monday, and I went to be with them while their parents worked.  We decorated this cute mushroom gingerbread house kit that I had bought,  we went to the Dollar 
Tree, had lunch at the Taco Joint (yes, that's the name!), and had the best time together.

  1. The recipe sounds yummy! I love cranberries and grew up near where the Ocean Spray company started. We used to go to the cranberry bogs to catch bullfrogs when I was a kid. I wouldn't touch one now, though. Lol! I was a little Tomboy :)
    Love your Chickadee cup and towel. Chickadees are such a sweet little bird. The book looks like something I would love.
