My Memorial Day tea is out by my waterfall.
We remember all those who served in the armed forces who fought and didn't come home.
I'm using my poppy teacup in remembrance of those fallen service members.
My little teapot is filled with succulents.
These little appetizers make for a nice teatime treat!
Yield: However many salami slices you have

Crispy Salami Appetizer Cups
I took this appetizer to my watercolor class potluck and it was a hit!
Ingredients
- Thinly sliced salami that is 4" in diameter (if it's less in diameter you won't be able to fill)
- Cherry tomatoes, cut in half, using two halves per cup)
- A jar of quartered marinated artichoke hearts (I only used one piece per cup)
- mozzarella cheese, cut in small cubes (I used mozzarella sticks, and cut into small cubes, using two per cup)
- olives (I used small pimento stuffed, using two per cup)
- fresh basil, cut into small pieces
- a little olive oil to drizzle
- a little balsamic vinegar to drizzle
Instructions
- Preheat oven to 400 degrees.
- Place the salami into a muffin tin with your fingers, or use the end of small glass that has been greased.
- Bake the cups for 7-9 minutes, or until the salami cups are crispy. Remove from the muffin tin and place onto paper towels and let cool on a cooling rack.
- Mix the rest of the ingredients in a bowl, and then place about a heaping tablespoon into each cooled salami cup. I tried to evenly place the ingredients into the cups. Fill the cups when they are cool. These are best filled right before serving.
- If you want, you can place a toothpick in each cup.
These two sweethearts graduated on the same day this past week. My daughter-in-law, Julie, sent this picture to our family texting group. Isn't it the cutest? Cissy is on the left and Avery is on the right. I was so incredibly blessed to be able to attend both. Cissy's was in the afternoon, and Avery's was in the evening.
My daughter Molly, works in the school system and was able to give Cissy her diploma on stage, and Molly had me as her special guest in reserved seating.
Here is Cissy with her mom and brothers, Caiden and Connor. Brother Riley is in South Korea right now.
I'm so lucky to have attended all of my grandchildren's graduation so far.
Avery graduated from the largest high school in Texas, with over 1700 graduates. It took place in the football stadium and we could see the graduates on the Jumbotron. It took almost two hours to get through all the names. At the end of the evening, there was a huge fireworks and drone show!

What a day of joy for this Nana! I got home at 11:30 at night but it was so worth it!
