These mini scones were leftover from my group's tea party that I hosted.
My water aerobics group has a luncheon every other month, and I always host a tea party in the Spring, and everyone brings a food item to share. I prepared tables for 28, but only 23 showed up. It's a lot of work, but I do love setting the tables, and preparing the flowers. The teapots here are three out of five that were arranged, and I tried to pick flower colors that matched the paper plates and napkins.
A large assortment of teas are put on the tables for the ladies to choose from. Paris was a favorite by many of the ladies.
These two-bite scones were a hit! The glaze keeps them fresh for several days.
Can you believe from an 8 inch square, you can get 32 mini scones?
I cut them out right on parchment paper and transferred them to the baking sheet. To save time, I made the dough ahead and froze them right on the tray and baked them the day before the party. I'm sharing the link for the scones, which you can find at King Arthur Flour Mini Scones. They recommended 1-2 cups of mini chips and I did only 1 cup and it was more than enough. Also, the glaze completely covers the scones and keeps them fresh much longer. The glaze could be cut in half. These are wonderful for a crowd, and after they are baked, you can then also cut them in half to make 64 one-bite scones.
