Today I'm sharing this fabulous chicken meal. I came across this recipe several years ago from The English Kitchen, and it's so easy to prepare, and oh so delicious! Marie calls this dish Cheesy Chicken Rarebits.
Here is the dish ready for baking in the oven. I had some frozen brussels sprouts from Trader Joe's that required the same temperature and time, and they were perfect with the chicken.

Cheesy Chicken Breasts
This recipe has such a short list of ingredients, but tastes so incredible! I have made this numerous times and the tomatoes just burst with flavor and the sauce is so very tasty.
Ingredients
- 4 skinless boneless chicken breasts (I used 2 large breasts and butterflied them into 4 thinner pieces)
- 1 and 1/4 sharp cheddar cheese, grated
- 1 heaping teaspoon of grainy mustard ( I use Honeycup Uniquely Sharp Mustard)
- 3 ounces of heavy cream, which is about 1/3 of a cup
- cherry tomatoes
- salt and pepper
Instructions
- If using large breasts, slice by butterflying the them and then cut at the hinge.
- Place the breast in an oiled baking dish and season with salt and pepper.
- Mix the cheese, cream and mustard together, and then spoon on top of chicken in dallops. Place the cherry tomatoes on top.
- Bake for 20-30 minutes in a 400 degree oven until the chicken is no longer pink.
Our temperatures here in Texas have been quite pleasant and I had my dessert on the patio. I made aa boxed angel food cake and sweetened some cut up strawberries for on top. Duncan Hines and Betty Crocker have angel food cake mixes and they are really good. I do have a tube pan, but this time I made the cake into loaf sizes. You also can make the cake into cupcakes. The important thing to remember is to NEVER grease the pans. My gorgeous strawberry tablecloth and napkins were a gift from Bernideen at Bernideen's Teatime, and I just love using them.
My strawberry pitcher and my beloved Mom's Royal Doulton figurine are so pretty on the tablecloth.

I always think of my mom and angel food cake together. My mom did not like shortcake, but always either used angel food or a sponge cake with sweetened strawberries, and that's what I do, too.
