I'm easing into Fall because it's still so hot here! I have my Fall teacups and other decor, but having a refreshing dessert with a raspberry pie. Raspberries were on sale at a local grocery for 97 cents and I overbought them and thought I'd better make a pie before they got moldy. The grape ivy plant was started by pieces that I cut from a plant that I've had for years. Grape ivy is one of my most favorite plants and can be rooted in water, planted and then given as gifts.
My cottage teapot looks pretty for Fall.
The Royal Albert Woodland Series Robin coordinates with the teapot nicely.

Raspberry Pie
If you love raspberries, you'll love this!
Ingredients
- About 18 ounces fresh raspberries
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 1 cup water
- 2 tablespoons light corn syrup
- pinch of salt
- 3 tablespoons raspberry gelatin
- 1 pie crust baked and cooled
Instructions
- Bake the pie crust and set aside to cool.
- Combine sugar and cornstarch in a saucepan and mix. Add water, corn syrup and pinch of salt. Cook, stirring constantly until the mixture turns to clear.
- Remove from heat and add the raspberry gelatin and stir to dissolve. Set aside to cool.
- Add the raspberries to the bottom of the baked and cooled pie crust. Pour the cooled syrup over the raspberries, covering them completely.
- Chill
Granddaughter Avery had her homecoming this past weekend. The blues that they wore look so beautiful, don't they?

Welcome to the first day of autumn (yesterday) to 90 degrees here - so it's sure been hot. But a short tiny storm with just a little bit of rain came and now it's in low 70s. Still not quite fall weather but it is a nice reprieve! Hope more rain comes though. This drought is so weird for Ohio. So a berry pie would be welcome indeed. WOW did you score a great price on raspberries. Perhaps you should make more jam with your willing helpers???? At that price you can't beat it. Would make nice Christmas presents.

ReplyDeleteKitty, your fall tea decor is wishful thinking, isn't it? It was 94° HOT here yesterday, and not much better today, with empty promises of rain (which barely made my rain gauge wet!). The kids really did look good in their blues. I have a great nephew in Katy whose mom shared mum day - same as Avery's. I laughed, and said those are TX mums!
