I'd love to fix one of these Mini Naan Flatbreads for you!
It's still warm here and I can enjoy my patio. The pretty napkins were my little Mom's and I think they look pretty for pre-Fall.
My Brown Betty teapot is my vase for today with these pretty Fallish mums.
This Royal Minster teacup that my friend Rosie gave from her Mom's collection looks Fallish to me.
Pizza #1 was this pepperoni, jalapeno and fresh mozzarella that I made for my son.
Pizza #3 was this breakfast, brunch, lunch or dinner pizza with scrambled eggs.
Mini Naan Flatbread Brunch Style
Yield: 1
I first had this at brunch with two of my friends after Mass on Sunday and recreated it at home.
Ingredients
- 1 tablespoon butter
- one mini pepper, sliced
- some green onion, sliced
- 2 eggs
- cooked bacon, crumbled for garnish
- salt and pepper
- Mini Naan Flatbread (I found mine at Aldi)
- Grated cheese (I used Trader Joe's Unexpected Cheddar; it has a hint of Parmesan and is so good!)
Instructions
- Melt the butter in a nonstick skillet, and then add the peppers and onions and saute' for a few minutes. Set aside.
- Whisk the eggs in a small bowl and then add them to the skillet, and cook them scrambled style.
- Toast the Naan Flatbread, and then add the eggs, peppers, onions, crumbled bacon and then top with the cheese.
Notes
To make pizza, add pizza sauce on the Naan bread, and then pepperoni, and Mozzarella cheese, and then bake at 375 until cheese is melty.
To make BBQ Chicken pizza, add a bit of BBQ sauce, and top with chopped, cooked chicken and cheese of choice, such as Gruyere, Smoked Gouda, Cheddar, or Mozzarella, and bake at 375 until cheese is melty.
My granddaughter Avery was honored at her varsity volleyball game this past week for getting 500 digs in her position as libero. A dig is a defensive play where the libero passes an attacked ball from low to the ground to keep it in play. It's one of the most important defensive skills in volleyball. It was so exciting, and we are very proud of her!
My beautiful granddaughter Ella turned 14 yesterday!

The naan breads all look yummy, Kitty, and your outdoor setting is so pretty. We enjoyed morning cool downs this weekend, and even though it will get hot again in the daytime, there's a definite difference in the weather (though still dry).

Congratulation to your granddaughter! That's a huge accomplishment and it's lovely that her school recognized her for it. I think it's so important to celebrate things like this during the school years.
