Strawberry Cheesecake Lush



It was a beautiful day to enjoy some Strawberry Cheesecake Lush. 

My church passed out roses for all the women for Mother's Day, for all women are mothers to children or pets and it was a way to honor all of us.  



I made this dessert for a luncheon that I attended, but saved a small portion for a treat at home. This snack set was a special gift for my beautiful friend, Linda, several years ago.  


I sipped this Strawberry Sensation black tea, but found it a bit on the astringent side.  

Isn't this the most darling hankie that I've had for years?

Strawberry Cheesecake Lush

Strawberry Cheesecake Lush

This is a creamy dessert that's best eaten in a day or two because the strawberries start to weep.

Ingredients

  • 1 package of Pecan Sandies or Golden Oreos
  • 6 tablespoons butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 (16-ounce) container of Frozen Whipped topping, thawed and divided
  • 2 packages instant cheesecake pudding mix (I used sugar free)
  • 3 cups milk
  • Around 3 cups of sliced strawberries

Instructions

  1. Crush the entire package of cookies. I did this in the food processor, but you can place the cookies in a ziplock bag and crush with a rolling pin. When the cookies are in fine crumbs, mix in the melted butter. Press the cookie mixture into a 9x13" pan and refrigerate while preparing the rest of the layers
  2. Beat together the powdered sugar, the softened cream cheese and 1 cup of the thawed whipped topping. Spread over the cookie layer.
  3. Mix together the pudding mix, milk, and another cup of whipped topping. Spread this over the cream cheese layer.
  4. Spread the sliced strawberries on top of the pudding layer, and then spread the remaining whipped topping on top.
  5. Refrigerate until serving and plan on eating within a day or two.

Notes

I had a package of Freeze Dried Strawberries from the Dollar Tree and I crushed them up into a fine dust and sprinkled on top as a garnish.






My daughter had me for brunch top left;  Caiden, top right turned 19, and my youngest son and daughter-in-law had son Mike and I for dinner.  My son Tim took me out to eat on Thursday and I forgot to get a picture of us. He was went with his family to a lake over the weekend.

    Your strawberry- themed tea time is so sweet. Too bad that the strawberry black tea was too astringent. I am always on the lookout for a good creamy strawberry blend!
