It's Memorial Day....
and it's our day of remembering those who died for our freedoms.
I'm using my poppy teacup that Bernideen from Bernideen's Teatime Blog sent me after my beloved husband passed away going on eleven years ago. Wasn't that a thoughtful and kind gift?
We are having a new chicken salad recipe that I tried, and it's so good!
Yield: 6
Poppy Seed Pecan Chicken Salad
I changed this recipe up to make it for my own tastes.
Ingredients
- Dressing:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 T. honey
- 1 T. Dijon mustard
- 1 T. poppy seeds
- salt and pepper to taste
- Salad:
- 4 cups cooked chopped chicken breasts (or use a rotisserie chicken)
- 1 stalk of celery, chopped
- 3/4 cup dried cherries (or cranberries)
- 1 cup pecans, chopped
- 1 T. finely chopped green onion
Instructions
- In a bowl, combine all dressing ingredients and whisk until combined. Add salt and pepper to taste.
- In a large bowl, combine all salad ingredients. Add the dressings and toss to coat.
My granddaughter, Avery, recently had her 17th birthday, and I took her and her family out to celebrate at an Italian restaurant that she chose.

ReplyDeleteHi, The chicken salad sounds Yummy. I have all of the ingredients, so I'm going to make it. I buy a Rotisserie chicken and portion it out and put in freezer bags, so I have chicken for recipes. Have a Great Day!
