I hope you all had a wonderful Thanksgiving. I had the BEST Thanksgiving ever! I set up a little teatime in my butler's pantry, which is between my dining area and my kitchen. It's where I make my tea and it's so convenient. Today, it's White Chocolate Peppermint tea by Celestial Seasonings. It's really tasty, and a little whipped cream on top, makes it decadent.
At Christmas time, Lady Catherine's Tea Room, which is on a timer, greets me in the morning. My mom and I bought this at K Mart years ago.
I made these brownies to take to my daughter's for Thanksgiving, along with some pies, and rolls. I wanted to share them because they are so easy! Lining the pan with foil makes it easy to get them out and cut them. I'm thinking for Christmas of using peppermint chips or Ghirardelli peppermint squares in place of the Symphony bars.
The yummy surprise in the middle really adds to these brownies.

Symphony Brownies
Paula Deen used a 9x13" pan, but I wanted a thicker brownie, and then only had to use 2 bars.
Ingredients
- 1 brownie mix for a 9x13" pan, even though you'll be using a 9x9" pan (mine was an 18.3 oz box)
- Ingredients that are on the back of the box (usually water, oil, eggs)
- 2-4.25 oz Symphony Bars (made by Hershey)
- Foil to line your pan
- Baking Spray
Instructions
- Preheat oven to 350 degrees.
- Line your 9x9" pan with foil. An easy way to do this is by placing the foil on the outside of the pan to form the square and then put the foil into the inside of the pan. Spray the foil with cooking spray.
- Make your brownies according to the directions on the back of the box. Put half of the brownie batter into your prepared pan and spread it evenly.
- Lay your unwrapped Symphony Bars onto the brownie batter.
- Take the rest of the brownie batter and spread it evenly on top of the bars, and covering completely. Using an offset spatula helps with this.
- Bake for about 35-40 minutes. Mine took 40 minutes.
- Let cool completely in the pan before lifting the brownies out by the foil. Cut into squares. You should get at least 36 small squares.
Notes
I want to try a peppermint version at Christmas time with Ghirardelli peppermint squares or maybe use Andes Mints.
My granddaughter, Avery, recently was baptized and I wanted to share what she wrote on Facebook. She had a crowd of friends to support her and I was honored to attend. She also was recognized by being chosen as Newcomer of the Year All-District, and Academic All-District. After all that excitement, she had her wisdom teeth removed the next morning!
My daughter, Molly and husband Eric, hosted 21 people at their beautiful home for our Thanksgiving. Everyone in our family was there, except for Molly's second oldest who is in the army in South Korea. What a wonderful time we had and a Thanksgiving to remember.

ReplyDeleteMy 8x8 glass Anchor Hocking (true vintage) shattered as it hit my counter while I was shuffling things on Thanksgiving morning, so I'll need to get a new pan/dish before further Christmas baking. 8x8, or 9x9 hmmmmm. The brownies sound great, and I bet Andes mints would be really good. Love the Kmart tea house and your c/s!
