Caramel Pecan Dream Bars and A Quick Stir Fry


I set a tea in front of my little waterfall because before too long I'll have to cover it. 

The needles from my Bald Cypress fall off in November and December and I have to protect the water and the pump.  This pretty brown calico is a Fall favorite of mine.

My pumpkin teapot is another favorite.

Caramel Pecan Dream Bars

I asked my one son what he would rank this recipe between 1-5 and he said "an 8".

Ingredients

  • For the Crust:
  • 1 box yellow cake mix
  • 1/3 cup butter, softened
  • 1 egg
  • For the Filling:
  • 1 can sweetened condensed milk
  • 1 cup pecans, chopped
  • 1/2 cup Heath Bits o' Brickle baking chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a 9 x 13" baking dish with baking spray.
  3. Mix together the cake mix, butter, and egg until it resembles a cookie dough. I did this in my mixer. Press the dough into the bottom of the baking dish.
  4. Pour the sweetened condensed milk over the dough, and evenly spread. Sprinkle on the pecans over the milk layer, and then sprinkle on the bits o' brickle.
  5. Bake for 25-30 minutes.
  6. Let cool before cutting.



I cooked a turkey breast that I had in my freezer that I bought after Christmas.  These fresh turkey breasts were marked down to 25 cents a pound!  Can you believe it??  I got so many meals from the turkey.  One of my favorite meals for leftover chicken, beef, pork, and in this case, turkey, is a simple stir fry.  I keep on hand frozen stir fry veggies, Veri Veri Teriyaki and 90 second brown rice.  I make this quick meal at least once a month.

Quick and Easy Stir Fry

Nothing could be simpler than this and it's so good!

Ingredients

  • Leftover chicken, beef, turkey, or pork, cut up
  • 1 bag of frozen stir fry veggies
  • Veri Veri Teriyaki Sauce
  • Pre cooked rice of your choice (I love the 90 second brown rice that you heat in the microwave)

Instructions

  1. Add a small amount of oil to a large skillet and heat. Add the cut up leftover meat and heat.
  2. Cook the frozen veggies in the microwave, under- cooking them a few minutes; drain the excess water.
  3. Add the veggies to the skillet and pour in the desired amount of Veri Veri Teriyaki Sauce; heat.
  4. Serve over rice, or eat it as is.




This darling granddaughter, Avery, went to homecoming recently.  Doesn't that color look beautiful on her?

  1. We eat stir fries often too and I just love how quickly they come together and that they can be customized to taste and to use up leftovers! Those bars sound so yummy and your granddaughter looks beautiful.

  6. Oh, I love that brown calico, too! That is just beautiful. We love stir fry, too! It is so healthy and easy. I usually chop fresh veggies, but I love your idea of buying them frozen. That would be so much easier and quicker. The pecan bars look amazing, too! A friend and I met at a coffee shop recently, and I had baklava that reminded me of pecan pie. May the Lord continually bless you and your family, sweet friend. :)
