Green Beans Potatoes and Sausage and Outdoor Tea


It's so unbelievably nice here in Texas! I could spend all day outside, enjoying this wonderful weather that we are having.  It's so great that it's not scorching hot.  Wish you could join me for my favorite oatmeal raisin cookies and a cup of Cranberry Autumn tea by Harney and Sons. 


Using brown transferware in the Fall, is something I look forward to, and this Johnson and Bros Olde English Countryside is a favorite.


My mom's little cottage girl teapot is holding my tea.  Isn't it sweet and it was made in the USA.

This is probably my favorite Instant Pot meal ever.  It is so very tasty, and good throughout the year.

Green Beans, Potatoes, and Sausage

Green Beans, Potatoes, and Sausage

This is my favorite Instant Pot meal, but could easily be adapted to the slow cooker by cooking it for several hours.

Ingredients

  • 3/4 cup chicken broth (I use about a teaspoon of Better Than Bouillon and water)
  • 12 oz smoked sausage, sliced
  • 1 lb red or yellow potatoes, quartered if large, or halved if small
  • 1 lb fresh green beans, trimmed
  • 4 teaspoons Cajun seasoning (seems like a lot, but it's just perfect
  • 1/2 teaspoon black pepper
  • 4 tablespoons butter, cut into small pieces

Instructions

  1. Pout the chicken broth into the Instant Pot.
  2. Add the sausage, potatoes, and green beans into the pot.
  3. Sprinkle the seasoning and pepper on top and toss with a spoon.
  4. Place the small pieces of butter on top.
  5. Cover the Instant Pot and make sure that the valve is in the sealed position.
  6. Cook on manual, high pressure, for 3 minutes, followed by a quick release.
  7. When the pin drops, remove the lid and stir.
  8. Enjoy!


I  finally was able to take my granddaughter, Ella, who turned 12 earlier in September, for a birthday dinner.  She chose a Mexican restaurant and it was so nice out that we could sit outside and enjoy the pretty waterfall and pond in the background.  Her sister, Avery, and cousin, Cissy, couldn't join us as they're too busy right now.  Hopefully next time!  We did get to visit Bath and Body Works, and Ella was able to pick out some things that she liked.


My daughter, Molly, had a birthday on October 1st, but she has been sick.  We will celebrate soon.  I'm just thankful that she was well for Riley's boot camp graduation.

  4. I hope Molly is feeling better soon!

    I am an oatmeal-raisin cookie fan from WAY back! I actually prefer them to chocolate chip! (I know, I know. I'm totally in the minority on that one, but it's true!) This time of year they are especially welcome in my belly!

    I've not had a green bean/potato/sausage mix before, but it sounds good...and super easy! I can't believe I GAVE AWAY the 2 BRAND NEW InstaPots that were at my Mom's house 3 years ago after she passed. I wasn't in my right mind. I guess I was so overwhelmed that the thought of learning something new was just too much.🤷🏽‍♀️

I was given a similar recipe on a recipe card and it has a little bell attached to it so I can find it. So glad you are having nice weather.   20. I'm so glad you're having nice weather, Kitty! We're supposed to have a few nice days this week but, so far, October has been a bit chilly. Your Instant Pot meal looks wonderful.
