Mini Omelet Muffins



We celebrated my son Tim's recent birthday with another brunch with his family.  He requested eggs and German pancakes.

 


This Nasco Lakeview teacup, made in Japan, is a favorite of mine.


   

German pancakes are a childhood favorite of my kids, and the recipe comes from a Farm Journal cookbook.  They're like thicker crepes and oh so good!  You can find the recipe for them here.  My grandson, Riley, is in that post when he was just a little guy.  Now he makes German Pancakes on his own because he loves them so much.  

My daughter invited me to go to the Pep Rally last week and it was the very best entertainment that I've been to in forever!!  Cissy cheered in it. 


Riley is there in the crowd of football players.  The senior class won the spirit award.  I left there with a happy smile on my face!

 

* Update on my Marine grandson who was in Kabul, Afghanistan at the time of the bombing. *

 He was in Kuwait, but is now in Saudi Arabia. 13 of the servicemen and women were killed; 15 were injured in the attack.  11 are in stable condition, 3 are in serious condition and 1 is in critical condition.  My heart is broken for the Gold Star families, and I'm continuing to pray for them, for those who were injured, and also for those Americans who were left in Afghanistan. One of my grandson's buddies had half his face blown off.  Please pray for all of them.

Mini Omelet Muffins

Mini Omelet Muffins

These are so good, and can be prepared ahead and reheated, either in the microwave or in a oven on low.

Ingredients

  • 10 eggs
  • 1/4 cup milk
  • salt and pepper to taste
  • chopped ham, about 1/2 cup
  • chopped mushrooms, about 1/2 cup
  • peppers, chopped, about 1/2 cup
  • 1 green onion, chopped
  • grated cheese, about 1/2 cup
  • Parmesan cheese for topping

Instructions

  1. Preheat oven to 350 degrees.  Spray a muffin pan with baking spray.
  2. Saute' the chopped mushrooms in a skillet with a little butter for a few minutes.  Set the mushrooms aside.
  3. Saute' the peppers, and the onions in a little butter until softened.  Set aside.
  4. Whip eggs with milk in a large bowl.
  5. Place the ham, mushrooms, peppers and onions in the muffin tins, varying the fillings.
  6. Add some grated cheese on top of the fillings.
  7. Pour the egg mixture on top of the fillings to the top of the muffin cavity.  Sprinkle on some Parmesan cheese.
  8. Place the muffin tin on a rimmed baking sheet just in case of spillage.
  9. Bake for about 20 minutes or until the filling is set.
  10. Let cool for about 10 minutes, and then place a knife around the sides and lift the mini omelets out and serve immediately or let cool, refrigerate, and re-warm later.  

Notes:

Other options that might be good might be sauteed asparagus, or broccoli.

  1. Kitty it is devastating to read of your grandson's buddy and all the other marines and troups; and all the others who are caught up with this tragic situation. Much prayer is needed for the families who have lost their loved ones, the injured, the Americans still in Afghanistan; and for the troups who have witnessed what went on. Such a devastating situation. Re those German pancakes, they certainly sound delicious. It is nice to read that you are enjoying fun activities with your family.

  2. Horrific things your grandson has seen. Thank you for the update. The msm is impossible to navigate and no one really knows what is going on. I will pray for them and for the broken families. I am so glad that Connor is out and will pray for all those that jb has left behind.

    Your breakfast looks delicious and how special of you to continue to offer special meals at birthday time.

  3. The week's events will haunt us for many years to come. Again, thank God for Connor's safety and, yes, I most certainly will continue praying for the Gold Star families. The update on those wounded is appreciated and very sad too.

The Afghanistan debacle is so distressing and tragic with the loss of life of our servicemen and women. Prayers for our Gold Star families and citizens that are still there. ♥

    I will remember Connor and the other Marines in my prayers. It will take a long time to recover from the physical and mental trauma of their experience...

  6. Oh a Kitty, it breaks my heart hearing about the loss of lives and also your grandson’s Buddy. So young and so dedicated to serving their country. Prayers for all. Happy belated birthday to Tim. German pancakes look so yummy. I have never made them. I make similar mini omelette muffins, but I use crust in the bottom. Have a lovely week.

  8. Oh, dear Lord have mercy, Kitty! I am SO sorry about Connor's friend!!! And all the dear ones who are injured and my heart goes out to the families. None of the ones affected will ever, ever be the same, and it is just heartrending. May God have mercy on all who are suffering.

  10. Happy post - and also horrifically tragic post.

    I am glad you were able to enjoy that gathering. Hope everyone stays healthy being so close together like that with this awful variant. I am praying for you. My bro-in-law has been very sick for two weeks with it and had to cancel a very long planned and anxiously awaited vacation. Very sad for them.

    I am continuing my prayers for the service folks - that is just awful. It's so hard to believe any of this is real, ya know what I mean? Just wow. Sending my hugs to you. ♥

    PS Those pancakes sounds amazing. May have to try and make them one day soon, thank you!

  12. Your brunch looks delish, especially the pancakes. I'm so glad you were able to attend the pep rally and have so much fun. Especially since Cissy and your grandson were there. Thank you for keeping us updated on Connor. I'm so relieved for you that he's safe. I'm so sorry for the families that lost their loved ones and those injured. It is almost unbearable to think about.   14. What a delicious-looking brunch, Kitty! I've already saved the recipe for the German pancakes and mini omelettes. I'll have to try them on my grandsons next time we have a sleepover. When we visited good friends in Georgia this past spring our hostess served mini omelettes in the morning and I asked for her recipe. I'll compare it with yours and make notes :) That is so sad about Connor's buddy. All the lives that were lost over over there during the past 20 years shouldn't be forgotten. I dearly hope he doesn't ever suffer from PTSD due to his experience. I am so grateful to all our service men and women.

Yes, what a horrible time with this Biden and Afghanistan situation. Total incompetence. Not accidental though as it is all part of their plan to surrender and bring down America.

  18. Just the other day I was thinking about some sort of mini omelette in a muffin tin, and then I saw your post. I have to make these. I always enjoy them when I have them out. I haven’t been to a pep rally in decades, but I always enjoyed them. This one looks like a lot of fun.
