I had prepared this post awhile ago, and didn't know if I would be able to share it.
However, I have such wonderful news, and I am beyond grateful for all the prayers that were said on behalf of my Marine grandson who was in Afghanistan. He is safely out of there! They had a ceremony for the fellow Marines that were killed, which he said was very sad. We had a very stressful week of fear and worry, but we are most appreciative for all your love, prayers and concern. Thank you, thank you! Please continue to pray for all those who are still in Afghanistan and for the families who lost their loved ones.
This sunshine-y table is set with my cheerful sunflower plate, napkins from my friend, Bea, and sweet vase from my daughter.
Bea also gave me this Mary Engelbreit teacup. It's so cute, isn't it?
It was Senior night for my grandson, Riley, in the red jersey. He's pictured with Caiden, Molly, my daughter and Cissy. The seniors were all announced with their parents.
My son, Tim, asked me if I wanted to watch granddaughter, Avery, play in her high school volleyball tournament and of course, I said "YES"! Avery's team won their division and it was super exciting!

Baked Eggs in Pepper Cups
I made these for a family brunch and they're so colorful and you can make them ahead! They are also so easy with only three ingredients.
Ingredients
- 4 medium bell peppers, any color
- salt
- pepper
- 8 large eggs
- Shredded Mexican-blend cheese
Instructions
- Preheat oven to 400 degrees. Coat a baking pan with cooking spray.
- Cut bell peppers in half through the stem end. Remove the ribs and seeds. Place the peppers in the pan, with the cut side up and sprinkle each with a little salt and pepper.
- Bake the peppers for 15 minutes. Remove the pan from the oven and crack 1 egg into each pepper cup. Season the eggs with a little salt and pepper, then top with some of the shredded cheese.
- Bake until the egg whites are set, 15-20 minutes.
- Serve right away or let cool , then refrigerate in an airtight container for up to 4 days. Reheat in the microwave.

So good to read your post. Such great relief and praise to our Heavenly Father for having His hand on Connor. Very grateful to know he was able to leave. This is such an interesting recipe! ReplyDeleteIt is a great blessing to find you posting today. The week was horrible. It was much more nerve wracking for the families I know. It is a sweet word to have Connor out of "there." He has had to face some big storms and trials. Ongoing prayers for him.
I thought "pepper" cups meant pepper as in salt and pepper. 😉 My culinary experience is limited.

Thank God, thank God, thank God!!!!!!!!!!!! I know the waiting had to be excruciating for you and your family. This war…ugly, ugly business. Factions have been warring and people have held deep seated hatred for each other since the beginning of time. It is so…ugh! I wish people values life the way they value those trivial things (power, money, popularity, etc) they sometimes do.😔 Anyway, I am grateful that your grandson was spared and pray for his safe and swift return home. I am praying for all those in harms way. And with these storms! My heart is so heavy these days with so much going on. But in the midst of it....keeping my eyes on HIM! Those pepper cups look divine. ReplyDeleteSo thankful for Connor’s safe evacuation from Afghanistan Kitty! I know it was such a relief to your family. I’m so saddened for the loss of the life of the 13 US service members, innocent citizens and the whole debacle. Continued prayers for those there and our country in these troubling times. On a happier note, love your sunshine-y table! ME designs always bring a smile to my face. Your baked eggs look delicious and love seeing the smiles on your sweet family's faces. ♥

ReplyDeleteOh Kitty, I was so relieved when you told me Connor is safe! I can’t imagine what you and your family were going through not knowing. I am so sad for those beautiful young people who lost their lives in Kabul, what a tragedy. I am so glad you got to do some family fun things with your children and grands, the photos are wonderful. ReplyDeleteSo good to see your sports-loving grands. Cissy is looking so grown up! Mu granddaughter Mackenzie played varsity volleyball and loved it. She is off to college this year -- not sure if she will have the chance to play or not. She has quite a heavy schedule of classes.
And the pepper cups look completely amazing. I will be trying those for sure. Our local supermarket often has wonderful deals on bags of red peppers.
Oh Kitty, thank you for letting me hear your Connor is safe. Thank God for his safety and exit from Afghanistan. As I said before, I am so saddened for those brave young people who lost their lives.
