Egg Roll in a Bowl


This is my new favorite dish that I tried this summer.  I found the recipe is a local magazine and adapted it for ease in preparation and ingredients

 My Marine grandson who who had returned to Kuwait after Afghanistan, and is now in Saudi Arabia, is scheduled to return to the States in early October.  Even though the Marines had taken the Covid shot, some of them got Covid when they returned to Saudi Arabia.  They have a gym there and it had to be shut down for a week.

Egg Roll in a Bowl

Egg Roll in a Bowl

This is my new favorite meal that I made this summer!

Ingredients

  • 1 teaspoon sesame oil
  • 1 tablespoon canola oil
  • 1 pound ground pork, or chicken, or beef (see NOTE)
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic, minced
  • 1 teaspoon ginger
  • 1 tablespoon flour
  • 1 bag cole slaw mix  (an 8 ounce bag is enough for two people, use a 16 ounce for 4 people)
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste
  • 1 green onion chopped, for garnish, optional
  • Sweet Chili Sauce for adding on top, or sauce that you like for egg rolls
  • Several wonton wraps for frying +oil

Instructions

  • For Fried Wonton Wraps:
  • Heat vegetable or  canola oil , enough to cover the bottom of a pan by 2" and heat to 375 degrees.
  • Heat the wonton wrappers, turning as needed until golden brown in color and crispy in texture.  Place on a paper towel and sprinkle with salt.  Set aside for garnishing the bowl.
  • If you have an air fryer, spray the wontons and "fry" them in there instead.
  • For the Bowl:
  • Heat sesame and canola oil in a skillet.  Add pork and soy sauce to pan, stirring until meat browns.  Stir in garlic and lightly saute'.  Reduce heat to low,  Add flour; cook and stir for four minutes before removing entire mixture from heat.
  • Place the pork mixture (use half if serving only two people, and save the rest for later) into a large bowl and fold in the cole slaw mix.  Stir in the rice vinegar, chili paste and an additional tablespoon of soy sauce, if desired.
  • Serve garnished with green onions and the Red Chili Sauce, and the fried wontons. 

Notes:

An 8-ounce bag of cole slaw is enough for two people. Save half the meat mixture for making lettuce wraps for another time.

  3. I LOVE egg roll in a bowl!!!!! It was one of my “go to” meals when on my weight loss journey about 3 years ago. I would only have one wonton, though, crushed and sprinkled over the top so at least I had the taste of it. Now that I have an air fryer, I could probably go full tilt with the wonton!🤔 At any rate, delicious and relatively easy to make…and very filling!!!

    I’m glad to know your grandson is safe and headed home soon despite the COVID glitch. I know your whole family is anxiously awaiting the day he sets foot on American soil!

  11. I love egg rolls, but have never tried the "in the bowl" version. I liked how we can add as much meat filling as we want in the bowl. LOL.

    Glad to hear that Connor will get a chance to rest and visit his family.

  17. Kitty, this sounds wonderful! Very similar to something I make, but I've never put sweet chili sauce on top. As soon as I saw that, I thought, "That would be perfect! Add to grocery list."

  18. This is one of my favorite meals, except we like it in a wrapper. On my blog, I use a shortcut, wrappers, coleslaw mix, oyster sauce and breakfast pork sausage. Simple and so delicious. Happy weekend Kitty.

  23. Thank you sweet friend. I made this today with a slight modification. Instead of adding the cole slaw after removing from the burner I added it and let the cabbage and carrots cook down. It was delicious 😘
