Cream Cheese and Cherry Pastries


These cream cheese cherry pastries are so tasty,  and my two youngest granddaughters helped me with them.  Little ones love to help!  

Harper spread the cherry on and Hayden sprinkled the sparkling sugar around the edges.  


My cherry teacup was given to me several years ago.  Doesn't it look like it should be in a diner?

Recently I applied for certification for Wildlife Habitat for my yard.  My son, Mike, stained and notched a piece of wood and applied the sign to it.

Cream Cheese Cherry Pastries

Cream Cheese Cherry Pastries

These are delicious tarts using puff pastry for the base.

Ingredients

  • 1 sheet of puff pastry, thawed
  • 4 ounces of softened cream cheese
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • about 1/2 cup of cherry pie filling (jams, preserves or other pie fillings would be good, too.)
  • 1 egg
  • Sparkling or coarse sugar

Instructions

  1. Preheat the oven to 400 degrees
  2. Beat the cream cheese with the sugar and the vanilla an almond extracts.  Put aside.
  3. Roll out the puff pastry slightly and then cut into 9 squares and place on a parchment or silicone lined baking sheet.  Using a knife, score a line about 1/2" from the edges of each square, being careful not to cut all the way through. This will help the edges to puff up.  Poke a few holes in the center of each pastry with a fork.
  4. Spread a heaping teaspoon of the cream cheese filling in the center of each pastry, and then top with about a tablespoon of cherry pie filling.
  5. Whisk the egg in a small bowl and then using a pastry brush, brush the edges of the pastries with the egg .  Sprinkle with the sparkling sugar.
  6. Bake  for 12-15 minutes, or until golden brown. 

Notes:

Try other pie fillings, jams, preserves, or lemon curd.

How fabulous your backyard is now certified for Wildlife Habitat. A fabulous sign. Does this mean I will catch a glimpse of a sweet bear enjoying tea and cake with you next time I visit? =)
