3-2-1 Microwave Cake

Sandi at Rose Chintz Cottage is having a party with the color pink for breast cancer awareness month.

Tea and a 3-2-1 cake is a perfect afternoon tea party treat!

Wouldn't this make a pretty gift?

I first saw this recipe on my friend Marsha's blog at thebetterbaker.blogspot.com/.  I mixed the cake mixes up in a food storage bag and  then measured individual servings out to give out as party favors.  I tried one of these cakes and they are delicious and really take care of the sweet tooth.  Wouldn't this make a great teacher, co-worker, assisted living resident or friend's gift??  I used mini snack size bags with the recipe included and they were perfect!  You could also put the mix right in a pretty mug that the person could bake the cake in and then later use for their tea or coffee.

1 box Angel Food cake mix (this is a MUST!)
1 box any flavor cake mix

In a food storage  bag, combine the two cake mixes together and mix well. For each individual cake serving, measure 3 Tablespoons of the cake mix combination and mix it with 2 Tablespoons of water in a small microwave-safe container. such as a coffee mug, ungreased.  Microwave on high for 1 minute, and you have your own instant individual  3-2-1 cake!
Keep remaining cake mixture stored in the food storage bag and use whenever you feel like a treat! You can top each cake with a dollop of fat free whipped topping and/or some fresh fruit.

I made a simple powdered sugar glaze  to ice mine.  I'm telling you, this cake is a fabulous treat!!

  7. I love this idea! What a great little gift suitable for so many occasions. Thanks for sharing.

On the topic of the bottle light:I am so glad I saw your comment and question.I tried to email you but it was returned to me. I would have felt terrible if I never responded. Bless your hubby for trying to do this project with you. My husband used a table top drill press. You insert the drill bit in there. You can use a 5/8 to 3/4 inch diamond drill bit. The end is actually dipped in diamond dust. They are not cheap (around $30) We made the investment because I want to make more bottles and hopefully sell them on Etsy. Our press does not squirt water at the same time it drills but you can remedy this by squirting water with a spray bottle while he is drilling the glass. It cuts it very clean. Good luck with this project and have fun. I know it will tun out amazing. Please send me a picture!!!

  11. I got this recipe from a friend a few months ago and it is so perfect for many things. Glad I came by today as I had not thought of little individual gifts in a cute cup for folks who I want to remember with just a little something.

  13. I wish I had seen this recipe when I was in college. The girls in my dorm used to attempt to bake cupcakes in the microwave for their friends on birthdays. One of the cake mix companies actually had a kit that you used to bake them in the microwave. I used to use it. Not only was it expensive, but it was a mess. The cake was always overdone when I made it too.

Your way sounds a lot easier to use, way less expensive, and I bet they are more yummy too. Thanks for sharing! I bet these mixes and a pretty mug would make great gifts for Christmas this year.

  15. Hi Kitty,
that sounds like an ingenious idea to bake a little cake portion in the microwave. Alas I don't get that cake mixture here. But may be its a luck, because I would probably always need such a cake for my sweet tooth. Thanks for sharing.
    Best greetings, Johanna

  25. I used to cook but never was one to really enjoy it. After I lost my husband, I do not do much anymore. I certainly enjoy eating what others prepare tho.
