Blueberry Ice Box Cake

Wouldn't you like to share a piece of cake and cup of tea with me?
This cake is so heavenly, not only because it is made with an angel food cake, but the filling is what is really  sends it to the stars!  It's an old recipe that I got from a friend, who got it from her Mom.  Here's the delicious recipe:


                                                                                                                       
1 angel food cake mix, prepared and baked according to directions on box
1 (8-ounce) package cream cheese, softened (I always use "lite")
1 cup powdered sugar
1 can blueberry pie filling (or cherry)
1 (8-ounce) container of frozen whipped topping, thawed

Cut cake into 4 layers.

Beat the softened cream cheese and powdered sugar together .  Add the pie filling and mix well.  Fold in the thawed whipped topping.

Spread the filling between each layer and on top.  Refrigerate.

  4. Oh, my Lord! This sounds so delicious, Kitty! I love blueberries and I'm betting this cake is to die for! I make a similar one using strawberries and whipped cream that you keep in the freezer!

  27. Your Aunt was a very talented painter!!! The design on the plate and cup is beautifully done and, I'm sure, a great treasure. she must have had incredible patience as well as a steady hand! The cake sounds really good. I love blueberries, and I love angel food cake. They must be a real knockout when put together! I always find it so hard to cut angel food cake, though. There must be some trick to it!

  29. Yes, I would love to share a piece of cake and a cup of tea with you! Your cake looks soooo good! I love blueberry anything, and angel food cake too, so this is a great combo. I always make angel food cake in a bundt or tube pan, but yours looks like it is just a layer pan. I am wondering if it is difficult to cut into 4 layers--it's usually hard to cut! If you have a good trick for that will you let us know? I have some painted dishes and cups from my husband's grandmother, but they are tucked away. I must get them out and use them, but she never did, so I'm a little afraid! Linda
