Decadent Pumpkin Oatmeal



For our outdoor breakfast, I used a black polka dot topper, my pumpkin bowls and black towels as napkins.  How about some chai tea to go along with the oatmeal?



 My centerpiece is a vintage-looking pumpkin head character from Tuesday Morning.  The bicycle is a cute find that my dear friend bought at Big Lots.  The little fella in the front basket is from Dollar Tree.  The ghost and pumpkin are from years ago.

I LOVE oatmeal and eat it year round, but recently I saw a pumpkin version done in the slow cooker on thebetterbaker.blogspot.com/,   I always make mine in the microwave and oh my, is this ever good for the Fall.  Now what makes this DECADENT, you ask?  Here's the secret......a scoop of vanilla ice cream on top!!!  I learned of this treat years ago from a friend and it just melts right into the hot oatmeal and you don't need any sweetener.  I use sugar-free ice cream or frozen yogurt on mine.   It may just change how you feel about oatmeal.  I made this for our son that's still recuperating from surgery and he said, "How could something so simple taste so good?"  I hope you try it!

For 1 serving:

1/3 cup old fashioned oats
2 T. canned pumpkin (a good way to use some of that leftover pumpkin from other recipes!)
1/4 t. pumpkin pie spice or a dash of cinnamon and a little nutmeg
2/3 cup water

Put all ingredients together into a microwave-safe bowl, stir together and then microwave for about 2 minutes (depending on your wattage).  Stir again and top with a scoop of ice cream!  Enjoy!!

  4. I am going to have to try pumpkin oatmeal and I will definitely be adding a scoop of vanilla ice cream.

  5. I eat oatmeal every single day m-f.. I am trying this!!! It sounds so wonderful. I could even make this saturday morning. I have oatmeal, pumpkin and ice cream,. Love your sweet bike with the cool guy on it.. how clever you put it all together. xo marlis

  7. Oh my goodness, Kitty - you always have the BEST recipes! I love oatmeal and pumpkin, so I'll be trying this one for sure. Love that it's single serving and microwaveable.

  10. Ice cream?!??!! On oatmeal?!??!!! You're trying to brainwash all the kids in America into thinking oatmeal is good, aren't you? Good thinking! Way to go! I personally like oatmeal, but everything's better with ice cream! I love your centerpiece!!! The bike is really cute, and the little pumpkin head man is rockin'. Or is that a girl? Maybe it's a metrosexual guy. Who knows? Anyway, it's cute!

  11. I love your bike and pumpkin guy! Pottery Barn has a bike that looks almost the same and I've been thinking about it. I actually love oatmeal, but with ice cream it would be irresistible! Linda

  12. Well, I want to make it, especially if I could have the decadent oatmeal in those great bowls! I have never heard of ice cream on oatmeal, and like you I like oatmeal -- sometimes it just tastes so good. Joni

  14. Kitty, this oatmeal recipe sounds out of this world good. I'm going to have to try it. I make it five days a week for Jim and I eat it occasionally. Got to say I love the tablescape. The bike with the witch is so cute, and those witchy stockings just adorable. Great post!

  19. Hi Kitty! How fun to visit your blog today! I eat oatmeal for breakfast every morning, and it has really helped bring my cholesterol down [the Dr. has me cut my Lipitor pill in half now]. I try to add blueberries or strawberries for variety, and now thanks to your post I'm very eager to add pumpkin. I never would have thought of that. You have a lovely blog! ~ Phyllis

  28. Oh .. going to try this.. I love Oatmeal. When I was a kid I ate Oatmeal for dinner because I didn't eat meat. I love meat now but still try every Oatmeal recipe I can find !
