Ahhhhh I can finally enjoy my patio! It was so very nice to sit in the dappled sunlight and enjoy the warmth. I set my table with a big star quilt that was made years ago. Tulips are from Trader Joe's and my adorable bunny plate is from Kirkland's where they came in a set of four with all being different. The dessert is one that I made when I was in my 20's and it is so good, and perfect for Springtime.
This teapot is a favorite for Spring and from a dear friend and looks pretty with my teacup.
My bunny teacup is going to be holding some Lemon Birthday Cake herbal tea, which is perfect for the lemon dessert.

Lemon Cups
I started making this lemony dessert when I was in my 20's and 50 years later, it's still a favorite. It's a magical dessert, in that a fluffy sponge cake forms on the top and a creamy, dreamy sauce sinks to the bottom. I've changed the order of instructions to make it more easily to follow. If you love lemon, you'll love this!
Ingredients
- 1 cup sugar
- 1/4 cup flour
- 2 tablespoons oil
- dash of salt
- 2 teaspoons lemon zest
- 1/3 cup lemon juice
- 1 and 1/2 cups scalded milk (see NOTE)
- 3 beaten egg yolks
- 3 stiff-beaten egg whites
Instructions
- Preheat oven to 325 degrees.
- In a medium sized bowl, combine sugar, flour, oil, and salt. Add lemon peel and juice. Set aside.
- Scald the milk. See NOTE for instructions.
- Beat the egg whites in a bowl with an electric mixer (I used my handheld mixer). Set aside.
- Beat the egg yolks until lemon colored. Slowly stir the scalded milk into the egg yolks; add this to the lemon mixture and stir. Now fold the stiffly beaten egg whites into this whole mixture.
- Pour into eight 5-ounce custard cups that are in a shallow pan. Pour hot water around the custard cups.
- Bake for 40 minutes or until the cake part is done.
Notes
How to scald milk: put milk in a heavy saucepan, and heat until bubbles form around the edges of the pan, and steam is rising from the surface and there's a thin skin on the surface.
My little waterfall is now cleaned and working and makes me so happy! Behind the waterfall and on the trellis is my clematis which made it through the winter and has buds on it. It's always exciting when things reappear and start growing.
My Lemon Cypress Tree made it through our freezing temperatures, although I did cover it with frost cloth. It looks small in the picture but it's really growing.
