Date and Marmalade Tea Bread




Top 'o the morning to you! 

My dear friend, Jackie, texted me about this bread that she had made and she sent me the recipe and said it was "a keeper".  I trust my friend's and their judgment and appreciate that they like to share with good things with me.  The teapot is one that I found at a local Trade Days years ago for I believe $1.25 and it's from County Cork Ireland.  The roses are from my grandson, Caiden, who brought them for my birthday.  The Irish flag is green, orange and white; Green is for the Catholics, Orange is for the Protestants, and White is for Peace between them.
 


The little table topper is one of my very favorites from my Great Aunt Kitty.  Isn't it the sweetest with the shamrocks on it?  The homespun napkin is one I made to match my cross stitched pillow on my sofa.  





My Rolland by Johnson Bros teacup is so worn, but the Celtic design still looks so pretty.

Date and Marmalade Tea Bread

This is such an easy, six ingredient quick bread and yes, it really has tea as an ingredient.

Ingredients

  • 1 cup cold strong Earl Grey tea
  • 1 cup chopped dates
  • 1 cup self rising flour (see NOTE)
  • 1/2 cup sugar
  • 1 egg
  • 3 tablespoons Orange Marmalade

Instructions

  1. Brew the Earl Grey tea, and let it get cold. Add the chopped dates to the tea and put in refrigerator for 2 hours or overnight.
  2. Heat oven to 350 degrees.
  3. Using an 8-1/2" x 4-1/2" loaf pan, grease it and line it with parchment paper.
  4. Mix flour, sugar, egg, and marmalade and mix in bowl until blended.
  5. Stir in the tea/date mixture, and mix completely. Pour into the loaf pan and bake for 45-55 minutes or until a toothpick inserted comes out clean.
  6. Let cool for 15 minutes on wire rack before removing.
  7. Serve with clotted cream and orange marmalade, or butter.

Notes

A quick way to make your own self rising flour:

mix 1 cup flour, 1/2 teaspoon salt, and 1-1/2 teaspoons baking powder.





My grandson, Caiden, couldn't come to my birthday brunch, but he came with these beautiful roses on my actual birthday.  My daughter, Molly, came after work and we all had dinner together, along with my son, Mike.
