I'd love to have you join me for a Shrimp "boil"!
This is my favorite summer meal and reminds me of when we took our family to Port Aransas one summer and we had this meal at a restaurant where they served it by spreading it out on a paper lined table and everybody just went for it.
It's so easy when you use foil packets, and clean up is a breeze. Here it is before I put another layer of foil on top.
Here it is all sealed up and ready for the grill or oven.

Shrimp "Boil" in Foil Packets
This recipe is easily doubled. It's so easy and so, so good!
Ingredients
- 1/2 pound of either red or yellow baby potatoes, halved
- 6 ounces of smoked sausage (I used Cajun Andouille sausage), sliced into 1/2" pieces
- 1/2 pound of uncooked shrimp (I used frozen so that they wouldn't overcook)
- 1 ear of corn, cut into several pieces
- 1 clove of garlic, minced (I like to use the frozen garlic from Trader Joe's that you pop out of the packet)
- 1/2 tablespoon of Old Bay seasoning or Cajun Seasoning, or a combo of both
- a squirt of olive oil
- salt and pepper to taste
- 2 wedges of lemon
- 2 tablespoon of butter, divided, and cut up into pieces.
Instructions
- Boil the potatoes in salted water for around 8 minutes, and then drain and set aside to cool, by placing them in a large bowl.
- Heat oven or grill to 425 degrees.
- Add all the ingredients except for the lemon and butter which you will put on later.
- Set out 2 large pieces of foil. If your pieces are not large enough you can use another piece on top.
- Divide the mixture onto the foil and then top each with a tablespoon of the cut up butter and a squeeze of lemon from the wedge.
- Now cover the mixture with the foil and fold and crimp all four edges of the packet to make sure that they are tightly sealed.
- Put the packets on the grill or in the oven for 15-20 minutes or until the shrimp is cooked through and veggies are tender. If you use the oven, place the packets on a rimmed baking sheet, in case of any leakage.
- Carefully open the packets because of the hot steam and serve and enjoy!
Granddaughter Ella was baptized yesterday. It was a beautiful experience and I was honored to attend the happy event. It was also Julie and Tim's 23rd wedding anniversary. Ella was so happy and she had a big group of friends there to celebrate with her. Ella's shirt that she was given says, "I was the only one he left the 99 for", which is in reference to the Parable of the Lost Sheep. I'm so very proud of Ella!

Congrats to Ella! That shrimp "boil" looks so good. I've never had a shrimp boil (or crab boil or craw fish boil) of any kind. I'm going to have to add that to our menu this coming month and give it a try.

ReplyDeleteWhat a day for Ella! I love that you were able to be there for her...and in such a pretty dress!! The shrimp boil looks great. They do this down at our beach for the annual lobsterfest dinner. I never thought about attempting it at home. What a great tip!! Thanks Kitty!!

Congratulations to Ella !!! What a special day! The shrimp boil looks so good!! I think we already have this recipe!! However I don't recall the easy cleanup! Rick wants to do this again I know!!
