My usual breakfast is my Crustless Quiche, which I love and make regularly and freeze in portions, but I saw this recipe on Facebook and wanted to try it. It is so filling!! The pretty lace tablecloth is from my friend Sarah, which she shared with me from her beloved mother's collection. It's in perfect condition. She also gave me a pink underlay tablecloth that I will use at another time.
I thought my bee tea pot would look pretty on my table.

Chia Seed Protein Breakfast Pudding
This breakfast is so filling! I found the recipe on Facebook and it keeps me full for 6 hours. I think the recipe was for one serving, but 2 servings is right for me.
Ingredients
- 1 cup old fashioned oats
- 1 cup Greek high protein yogurt, I used vanilla
- 1 scoop protein powder, I used vanilla
- 1/2 cup milk of choice, I used whole milk
- 1 tablespoon chia seeds
- blueberries for serving, and or a tablespoon of berry jam
Instructions
- In a medium sized bowl, mix well the oats, Greek yogurt, protein powder, milk, and chia seeds.
- Cover and refrigerate overnight to let the oats and chia seeds expand.
- In the morning, top with blueberries and or a drizzle of jam, if desired.

Like you, I typically have a breakfast with eggs, but I'm going to make this to change things up. ReplyDeleteThat sounds yummy! I have made chia seed protein pudding before but without the oats (though I often put a bit of granola on top anyway because I'm not a huge fan of the texture of the chia seeds).
