Treats, Tea, and Beans for an Arctic Blast


Oh my word, more frigid 🥶temperatures arrived in the Dallas area!  

This time, no snow came with it, but the temperatures with the wind chill were 4 degrees.  I don't think my hands can warm up, which definitely calls for another cup of hot tea,  just to hug the cup.  Isn't my amaryllis plant so gorgeous on a cold day?   Thank you, Janne!  These plants are such a fun gift .


My pretty pine cone teacup, from a beautiful friend, is perfect for this wintry season.  Having seasonal teacups makes it extra special for sipping and to think of the friend who has sent the gift.  


I always use this pretty Winter teapot that my sister sent to me.


I saw this idea of making a treat with Greek yogurt and peanut butter.  Here is the mixture that I then shaped into patties and froze.


You then dip the frozen patties into melted chocolate.  I decided to just pour some on with a spoon.

Chocolate Covered Frozen Greek Yogurt and Peanut Butter Patties

Chocolate Covered Frozen Greek Yogurt and Peanut Butter Patties

These little patties help to satisfy a sweet tooth and give the additional benefit of extra protein.

Ingredients

  • 1 container of Greek yogurt, or nay high protein yogurt (I used plain, but I think a vanilla flavored one would be better, or add in a little honey or maple syrup)
  • 2 heaping tablespoons of peanut butter
  • chocolate for melting
  • chopped peanuts for garnish

Instructions

  1. Mix the yogurt and peanut butter together until smooth, and drop into patties onto parchment lined baking sheet and freeze until firm.
  2. Melt the chocolate according to package directions.
  3. Either dip the patties into the chocolate or spoon some on the tops. Sprinkle the chopped peanuts on quickly because the chocolate hardens very quickly.
  4. Enjoy your frozen treats!




My daughter told me that she was making Dense Bean Salad and that they eat it all week long.  I had never heard of it, but I guess it's very popular.  I'll share with you how my daughter told me.

Dense Bean Salad

Dense Bean Salad

This is a nice side dish, or could be a meal with some added protein. Choose the canned beans that you like.

Ingredients

  • 1 can Great Northern Beans, drained and rinsed
  • 1 can Cannellini Beans, drained and rinsed
  • 1/2 of an English cucumber, chopped
  • 1/2 of a red pepper, chopped (or use yellow, or both)
  • 5-6 green onions, sliced (or use a red onion)
  • 1/2 cup olives, sliced ( can use green, black, or Kalamata)
  • 6 ounces of Feta cheese, crumbled
  • The Dressing
  • 1/4 cup olive oil
  • juice of one lemon (or 1/4 cup apple cider vinegar)
  • 1 teaspoon of dijon mustard (I used a Honey Mustard for some sweetness)
  • 2-3 garlic cloves, minced
  • salt and pepper
  • about 1/2 teaspoon of of Greek seasoning or oregano
  • about a teaspoon of dried parsley

Instructions

  1. Chop all the veggies into bite size pieces; slice the olives. Put in a large bowl.
  2. Drain and rinse the beans, and add to the veggies in the bowl, along with the Feta cheese,.
  3. Add all the ingredients for the dressing together in a small bowl and whisk. Add to the the beans and veggies and toss.
  4. Enjoy!

Notes

My daughter likes to use black beans and garbanzo bean, and also adds tomatoes, black olives, and sometimes carrots, celery, red cabbage, banana peppers, and cubed sharp cheddar cheese. You can use what you like. I think sliced salami would be good in this, too.

    Sorry this entire country is cold right now. It is 7 degrees with big time double digits below zero wind chill right now. My sister in Florida says the fruit growers are VERY worried about it being below freezing. Sigh. More prayers needed for this poor tired Earth. Hugs.

  3. Brrrrr…it’s cold outside Kitty! 🥶 We’re in the teens this morning which is warm in comparison to subzero wind chills in the Midwest. Your frozen treats are an easy way to satisfy your sweet tooth and I like Molly’s additions to the bean salad…I think salami would be good too! I’ve been using my milk frother you gave me and loving it for my Chai Lattes.☕ Thank you again, stay warm and cozy! ❤️❄️

  8. We're in a cold weather advisory here in SE Wisconsin! It's forecase to dip down to -11 tonight! Yikes, it's cold! We have no snow cover either so I worry about some of my more tender perennials not surviving. I would say a cup of warm tea and one of your yogurt peanut butter treats would sound perfect right now! I've seen those bean salads on IG too! They are very popular! I've never seen a blue amaryllis before! It's so pretty and looks like snow and ice ;)

  10. Kitty you have the prettiest tea sets and they're always so perfect for the seasons and the weather! It's cold here, too. We got about 8 inches of snow last night and it's about 10 degrees here, now. I think I could use some warm treats right about now!! Stay warm!!

  12. ooh, that's cold for you! The weather people have said that the cold air from Siberia can't get over the Rockies, so our area is spared from this front. It's still chilly, just barely freezing at night. Love the idea of those yogurt and peanut butter dabs. Stay warm, my friend.
