Impossibly Easy Ham and Swiss Pie and Shortbread Spritz

Do you have a love for easy recipes? 

Any more, if there's a long list of ingredients, I avoid them.  This impossible pie is so easy, and I started making them back in the 1970's.   My checkered heart plate is a favorite of mine and blends well on my very first Big Star quilt that I made.  The little heart oil lamp was a gift from my nephew, Sean, when he came to visit us one summer when he was a little kid.  The Trader Joe's Well Rested tea is nice to drink in the evening since it is caffeine free, and it's tasty.


This beautiful teacup from dear Mary at Home Is Where The Boat Is has been waiting to make it's debut and it blends so well with my plate and table covering.  Don't you just love the scalloped edging around the rim of the cup and saucer?  A pretty teacup just warms my heart and soul.  Thank you, Mary!



This impossible pie might just be my favorite that I've made yet!  The original recipe was with bacon, but I had some leftover ham and I wanted more protein.   Why are they "impossible", you ask?  They form their own very light crust.

Impossibly Easy Ham and Swiss Cheese Pie

Impossibly Easy Ham and Swiss Cheese Pie

Impossible Pies are so easy and oh so tasty! The crust forms as the pie bakes. This one is so great for any meal of the day.

Ingredients

  • 1 cup of chopped ham
  • 1 cup of shredded Swiss cheese
  • 5-6 green onions, sliced
  • 3/4 cup Bisquick or another baking mix that you prefer
  • 1 1/2 milk
  • 3 eggs
  • 1/8 pepper

Instructions

  1. Heat oven to 400 degrees. Grease a 9-inch glass pie plate. Sprinkle ham, cheese and onion into the pie plate.
  2. In a medium bowl, beat the remaining ingredient's until blended; pour into pie plate.
  3. Bake for 35-40 minutes or until knife inserted in center comes out clean. Let stand for 5 minutes before serving.

  1. I used to make impossible oies in the 70s with Bisquick, Kitty! They were great, as I'm sure yours is. Pretty tea cup and tabletop. And you still have your little oil lamp, how sweet!

  10. I remember when Bisquick came out with a variety of 'Impossible' recipes! There were great for a young wife eager to please her husband :) And there are so many variations and add-ons to suit what's in the frig. Such a pretty teacup and those spritz shortbreads are calling my name!!

  16. That cup and saucer is just beautiful! Somewhere I have a dozen different cups and saucers. My mother and I both used to collect them, and she would use a different one at each place setting when she served lunch, and her lunches were legendary. I’m not sure what happened to all of those when I had to sell her and dad‘s house after they passed away (the anniversary of both of their passings is next week on the 11th and 12th, so always a sad week for me), but I need to get out some of my tea cups. Spring Just seems like the time for this. While I’m at it, I think I’m going to make this ham and Swiss pie. It looks so delicious!
