Let's have some cookie cake with a cup of tea today.
I made one of my favorite cookie recipes but put the dough into my very old heart shaped pans. Cherubs and angels are scattered around my home as part of my everyday decor.
My tea service was a gift from some very dear friends, and it's perfect for Valentine's Day.
This beautiful plate was made in Portugal and is another piece that's perfect for Valentine's Day. I think I bought it at Ross years ago. I can't believe that I've never shared this cookie recipe, but I will do so today. There is not any flour in it at all, and it makes quite a bit. I decorated it with some butter cream and some festive sprinkles.

Peanut Butter Jumbos
I made this recipe and it filled two heart cake pans, six mini hearts, and six ice cream scoop size cookies. This is one of my all-time favorite cookies besides oatmeal raisin that I love the most. There is no flour in this cookie. You can change out the M&M's to go with the seasons.
Ingredients
- 1/2 cup butter
- 1 cup packed brown sugar
- 1 cup granulated sugar
- 1 and 1/2 cups peanut butter
- 3 eggs
- 2 teaspoons baking soda
- 1 teaspoon vanilla
- 4 and 1/2 cups rolled oats
- 1 cup semisweet chocolate chips
- 1 cup candy-coated chocolate pieces (M&M's)
Instructions
- Preheat oven to 350 degrees. Lightly grease cookie sheets or use parchment paper.
- Beat butter, sugars, peanut butter and eggs in large bowl until well blended. Blend in baking soda, vanilla and oats until well mixed. Stir in chocolate chips and candy pieces.
- Use an ice cream scoop for each cookie. Place on prepared cookie sheets, spacing about 4 inches apart. Press each cookie to flatten slightly.
- Bake about 14-15 minutes or until firm in the center.
- For the cookie cakes, I prepared the pans and filled each about half full.
- Let the cookies and the cookie cakes cool for a few minutes in the pans before removing them to a wire rack to finish cooling.
Notes
I sometimes freeze the cookie dough balls, and then store them in a food safe container, and take them out when I want a freshly baked cookie.
For the cookie cakes, I froze them after they were baked and decorated, to be used for gifts.
This casserole is so easy and perfect for someone that needs a home cooked meal delivered. I've made it twice this winter already as it's that good!

Chicken and Broccoli Pasta Casserole
This is such a delicious comfort food casserole, and one I'll be making again and again.
Ingredients
- 8 ounces dry penne pasta
- 3 cups fresh broccoli florets
- 2-3 cups shredded cooked chicken
- 1 jar 15-ounce alfredo sauce
- 1/2 cup milk
- 1 teaspoon fresh minced garlic
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped roasted red pepper drained (I omitted)
- Topping:
- 2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 375 degrees. Grease 13" x 9" baking dish.
- Bring pot of salted water to boil. Add pasta and cook 1 minute less than package instructions. Add broccoli to pot during last 2 minutes of pasta cooking time.
- Meanwhile in bowl add shredded chicken and pour in alfredo sauce. Pour milk in alfredo sauce jar, put on lid and shake to release remaining sauce.
- To chicken mixture, stir in the rest of the ingredients except mozzarella.
- When pasta and broccoli are done, drain and pour into baking dish.
- Pour in chicken alfredo mixture. Stir to combine. Top with mozzarella.
- Bake uncovered for 20-25 minutes or until hot and bubbly.
