It's still quite warm (HOT!) here in Texas, but I wanted to set a table outside.
I made some Sopapilla Cheesecake Bars for a fajita party luncheon that our big group had. We had over 30 ladies attend and everyone participates and brings or is assigned something. The bars were a success and I shared some with my dear, sweet neighbors.
My sunflower plates are a favorite of mine from Pier 1 years ago, and I use them in August and September. Jenna from The Painted Apron sent me the beautiful print that she painted that I framed.
Isn't this the sweetest sunflower teacup? There are no markings on it, but it and the pillow covers came from Amazon.
This tea cozy was stitched up last year and the gingham napkins were sewn years ago.
The Sopapilla Bars can be cut in large squares or small, depending on your crowd.
Sopapilla Cheesecake Bars
Yield: 12 large or up to 48 small bars
These bars are really easy and so tasty for a Mexican themed party.
Ingredients
- cooking spray
- 2 (8 ounce) packages cream cheese, softened
- 1 and 1/2 cups white sugar, divided
- 1 teaspoon vanilla extract
- 2 (8 ounce) cans refrigerated crescent rolls (the crescent roll sheets are great for this)
- ½ cup butter, melted
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 degrees. Grease a 9x13-inch baking dish with cooking spray.
- Beat cream cheese, 1 cup sugar, and vanilla extract in a bowl until smooth.
- Unroll crescent roll dough, and use a rolling pin to shape each sheet into a 9x13-inch rectangle. Press one piece into the bottom of the prepared baking dish. Evenly spread cream cheese mixture on top, then cover with remaining piece of crescent dough.
- Brush the top with the melted butter.
- Stir together the remaining 1/2 cup of sugar and the cinnamon and sprinkle over the top of the melted butter.
- Bake in the preheated oven until crescent dough has puffed and turned golden brown, about 30 minutes.
- Cool completely in the pan for about 2 hours before cutting into 12 squares.
Notes
You can drizzle some honey on top after the bars come out of the oven, if you wish.

You asked about the pineapple chunks - these were canned chunks, and only soaked in Fireball, then dusted with cinnamon sugar - - and yes, once before I soaked a fresh ring of pineapple (can use canned), rolled in brown sugar and baked . ReplyDeleteThis is such a yummy recipe, we used to make it years ago, before our no-sugar days. Oh, it is SO good! It really does taste like a sopapilla! Your sunflower tablescape and beautiful plates are just gorgeous, and I love the teapot warmer too! It is so warm and cheery! I'm sure your neighbors enjoyed the bars too.
