Salmon Caprese





A friend mentioned that she made a Salmon Caprese for her sisters.  

I had all the ingredients and decided that it sounded so good, and I made some.




I ate half and saved the other half for my son.  Sweet potato fries are a weakness of mine and I baked some in my oven as an accompaniment.  This was a fabulous meal!

Salmon Caprese

Salmon Caprese

I'm giving the ingredients for one piece of salmon, but it's easily doubled or quadrupled. It is so good!

Ingredients

  • A 5-6 ounce piece of salmon
  • 1 teaspoon olive oil
  • salt and pepper
  • Fresh Mozzarella
  • 1 small tomato, sliced, or some grape tomatoes that are cut in half
  • garlic powder
  • Fresh basil
  • Balsamic vinegar (or use a Balsamic glaze)

Instructions

  1. Preheat oven to 400 degrees.
  2. Line a rimmed baking sheet with parchment paper.
  3. Brush salmon with the olive oil and season with salt and pepper.
  4. Place slices of fresh Mozzarella on top, and then place slices of tomato or grape tomatoes, that have been cut in half, on top of the cheese. Sprinkle with the garlic powder.
  5. Bake for 20-25 minutes or until the salmon can easily be flaked with a fork. If your salmon is very thin, you may need to check at 15 minutes.
  6. While the salmon is baking, chiffonade the basil and then snip into small pieces. Also, heat a small amount of Balsamic vinegar for a few minutes, until it is thick.
  7. When the salmon is done, remove the skin if it has some, sprinkle with the basil and drizzle some of the Balsamic glaze on top.
  8. Buon Appetito!





I recently watched Bailey, my son Tim, DIL Julie, Avery and Ella's dog while they were gone for a week on vacation.




Cissy, who is 4th from the left on top, is going to be a senior this year, and I was asked to embroider the names of the senior varsity cheerleaders onto their beach towels.  You can only see part of one girl's in the picture.

  4. Kitty, what a nice idea for the salmon. I will have to try this sometime. I used to make salmon so much (at least once a week) that we got tired of it! LOL. The salmon made this way sounds great. I hope you have a nice week.

  16. Oh I bet that's delicious. Bet Michael would love it, too. And those towels are awesome - love she asked you to do that. It's a big thing. My sis always got her 3 daughter's besties from high school back then towels with the college of their choices logo on it and hired someone to embroider their names on them as a grad gift. She did that for years. Hard to believe her youngest graduates in December. Time sure flies. Cissy will be there in no time. How did that even happen??? ♥

  18. What a great idea to embroider the towels for all the cheerleaders. A lot of work, but definitely worth it. This is a cute photo, which will be remembered through the years. I'm not a salmon lover, but my daughter loves to make the Caprese salad now and then. ;)
