Cauliflower Crust Pesto Chicken Pizza





I recently tasted a cauliflower crust pizza, and wanted to try making it at home. 

A friend and I split one at our fitness center and it was so good!  It makes for an excellent lunch or dinner, with a side salad.  



This is my pre-Fall faux centerpiece that I made several years ago.  


These napkins from kitchen towels were made so long ago.

A friend took me to this new H Tea O shop that recently opened.  I don't usually buy bottled iced tea, but this was buy one, get one free.  The shop has all these dispensers and you can sample all the teas, and then buy by the cupful, or in jugs of various sizes.  I bought the Unsweet Zero (Truvia sweetened), and the Wild Raspberry.  I mixed the two for my  cauliflower pizza dinner.

This was the pizza right out of the oven.  I'm thinking that pizza sauce, instead of pesto would be excellent, too.

Cauliflower Crust Pesto Chicken Pizza

This is a tasty alternative to those who are watching their carbs and still want to eat pizza.

Ingredients

  • 1- 12 ounce bag of frozen cauliflower rice, thawed
  • 1 egg, beaten
  • 1/3 cup Parmesan cheese, or goat cheese
  • 1 teaspoon dried oregano, or Italian blend spice
  • 1/4 teaspoon salt
  • A couple of tablespoons of homemade or store-bought pesto
  • Fresh Mozzarella slices
  • Chopped, cooked chicken pieces
  • Chopped tomatoes

Instructions

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  2. Squeeze the excess water out of the thawed cauliflower by wrapping into a clean dish towel and twist it.
  3. In a large bowl, mix up the squeezed-out cauliflower rice, the beaten egg, cheese, oregano, and salt.
  4. Press the "dough" onto the parchment lined baking sheet, and spread it out with your hands, keeping it about 1/4" thick.
  5. Bake for 30 minutes until the top looks golden.
  6. Add the pesto, then the mozzarella, chicken, and chopped tomatoes.
  7. Return to oven and make about 10 more minutes until the cheese is melted.




Avery had her first volleyball game and her team won all three games in a row.  In Varsity, you must win 3 out of 5 games to be declared the winner.

  6. We have loved cauliflower pizza for a while, it is so nice to enjoy pizza without the extra carbs! It has a rich crunchy flavor, I think. I like ours with pizza sauce and pepperoni.   11. Your pizza looks so tasty Kitty! I tried making a cauliflower crust years ago from a head of cauliflower before cauliflower rice was available, so much easier (and less messy) now.
