Peppermint Bark Chocolate Crackle Cookies




Hello Christmas Friends! I've set a tea in front of my bedroom tree that's on my childhood sled.  We are having a family favorite cookie, but I enhanced it by adding some peppermint bark chips.  We are also having some Candy Cane tea.  I bought a Christmas cactus this year and hope that I can get it to rebloom next year.  


This is my view from my bed and the tree lights are on a timer to come on in the morning and evening.  My four beautiful children can always be seen, too.   


My darling daughter gave me this pretty teacup several Christmases ago, with a matching creamer.  


I bought these chips in hopes to use them for something yummy and decided to add them to our favorite Chocolate Crackles.  The cookies are winners!



The addition of the peppermint flavor is perfect for Christmastime.  




Yield: 3-4 dozen depending on size formed

Peppermint Bark Chocolate Crackle Cookies

Peppermint Bark Chocolate Crackle Cookies

Adding the peppermint bark chips made for a fun addition to this family favorite.

Ingredients

  • 1- 18.25 oz devil's food cake mix (see NOTE)
  • 2 eggs, slightly beaten
  • 1 tablespoon water
  • 1/2 cup shortening
  • 1 cup of peppermint bark chips (I used Ghirardelli peppermint bark mix-ins)
  • powdered sugar

Instructions

  1. Line baking sheets with parchment paper.
  2. Preheat oven to 375 degrees.
  3. Combine cake mix, eggs, water and shortening in a mixer. Mix until well blended.
  4. Add the peppermint bark chips and mix again.
  5. Shape the dough into walnut size balls. Roll or put in a bag with some powdered sugar and coat or shake.
  6. Place on the parchment lined baking sheets and bake for 8-10 minutes.

Notes

Since cake mixes have reduced in size, I keep some extra cake mix in my pantry. I add a heaping 1/2 cup of extra cake mix to equal the 18.25 ounce box.

  4. I love that corner view in your bedroom, Kitty! The teacup, tea and cookies are perfect for this season. I've made the crackle cookie with peppermint extract and a single kiss depressed on top. I bet the chips would be extra good to have the minty taste throughout the cookie! Have a wonderful week.

  7. Sweet! I keep my Christmas cactuses on my porch starting in the Spring after danger of frost has passed. Water one time weekly and keep them on the porch until nighttime temps dip around 45-50 degrees. By that time the buds have set and flowers start to appear. I bring them indoors but not too close to a heat source. Hope this helps.

  17. Alas, I am SO far behind on my blog reading! I am trying to catch up today. I so enjoy visiting with you, sweet friend. Your Christmas setting in your room is so pretty. I am still not ready to take down our living room tree. I started to today since we are home from work, but when our dear boy mentioned how comforting it is, I decided to leave it up a while longer. I don't feel the need to conform to anyone else's timeline on Christmas decor, and I don't march to anyone else's drumbeat. LOL! May God bless you today!
