Crunchy Fudge Sandwiches



 
Let's have a treat out by my waterfall!  The temperatures have dropped below 100 degrees and I can sit outside again.  

The pretty Spode Copeland Hazel Dell teacup was a gift years ago.  The detail on it is amazing and really doesn't come through in my photo.


Yield: 25 1-1/2" squares or 36 1" squares

Crunchy Fudge Sandwiches

These little treats are so tasty and the recipe is from the back of a bag of butterscotch chips, probably in the 1970's.

Ingredients

  • 1 cup butterscotch chips
  • 1/2 cup peanut butter
  • 4 cups crisp rice cereal (Rice Krispies)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup powdered sugar
  • 2 T. butter
  • 1 T. water

Instructions

  1. Melt the butterscotch chips with the peanut butter in a heavy saucepan over low heat, stirring until blended. (Or melt in the microwave in a microwave safe bowl.)
  2. Stir in the crisp rice cereal. Press half of this mixture into a buttered 8" square pan. Chill. Set remainder aside. (If you wet your hands it makes pressing easier).
  3. Stir over hot water, the chocolate chips, powdered sugar, butter and water until chocolate melts. (This can also be done in the microwave being careful to do on lower power and in a microwave safe bowl). Spread over chilled mixture. Top with reserved mixture. Chill. Cut into squares.

  3. Oh my! Those do sound yummy! And such a beautiful setting in which to enjoy them with a cup of tea. I love that teacup and saucer! So pretty! I am waiting for some cooler weather here before I can enjoy sitting outside again. It's still just too hot and humid to enjoy it. I know fall is coming...it's just not quite fast enough to suit me!   4. Glad the temperatures are cooling down over there. I noticed today that my front tree has started shedding its leaves...fall is coming!

    I'm a fan of the scallop edges of your pretty Spode teacup! I'd also love to ry one of your crunchy fudge sandwiches. What a perfect tea time treat!

  5. I love this cute idea. It has a lot of the same ingredients in Scotcheroos, and I'm wild about them. I will have to try this one soon. Always a great recipe when you don't have to heat up the kitchen. So glad you shared. <3

  10. YUM! Those look so good Kitty. Girl, it's below a 100 here right now too but it's still hot. I am so glad though that you were able to enjoy sitting out again.
