Brussel Sprouts and Sweet Potato Hash


This hash is such a delicious treat that I recreated from seeing it at my fitness center that I go to. 

I'm fortunate to have a free membership with my medicare insurance, that I go to every morning.   I saw one of the chefs in the cafe' preparing this hash one morning, and she explained to me what was in it.  I immediately stopped at the grocery on the way home, and bought the ingredients.  Speaking of the grocery, I saw wonderful fresh corn on the cob, took it to the checkout and it was....$2.00 per ear!!!!!!!!!  I said that I wouldn't pay that, and the checker agreed.  He went to management and he then charged me 50 cents each, but still way more than I used to pay.

Harper and Hayden are home from Colorado and I was invited to watch their cheerleading performance.  Here is Harper on top!

Brussel Sprouts and Sweet Potato Hash

Brussel Sprouts and Sweet Potato Hash

I recreated this recipe after hearing about it at my fitness club. It's so tasty and would be great with eggs, for breakfast, or with chicken, pork tenderloin, or salmon for dinner. You can't roast the two veggies together because the sweet potatoes take longer to roast.

Ingredients

  • About 8 large brussel sprouts
  • 1 large sweet potato
  • olive oil
  • salt and pepper
  • 4 slices of crispy bacon, crumbled

Instructions

  1. Preheat oven to 425 degrees.
  2. Cut the ends off of the brussel spouts and chop them up.
  3. Spread the the pieces onto a parchment lined rimmed sheet pan and sprinkle with olive oil and salt and pepper.
  4. Roast until they soften, checking at around 8 minutes.
  5. While the brussel sprouts are roasting, peel the sweet potato and cut into 1/2-3/4" pieces.
  6. Spread the sweet potato cubes onto a parchment lined rimmed sheet pan, and sprinkle with olive oil and salt and pepper.
  7. Roast until softened; mine took about 12-15 minutes.
  8. Combine the brussel sprouts and the sweet potatoes and sprinkle with the crispy bacon pieces.
  9. Enjoy this delicious hash!

Notes

I'm thinking that this could also be done in an air fryer.

To make this vegan, leave out the bacon, and add chopped red and green peppers.

  1. I'm saving this recipe for fall when the farm gives me brussel sprouts. I love that Hayden and Harper are always excited to see you. The corn prices are high this year, and the farm I go to is not making much money on it since they had an unexpected expense half way through the growing season due to weather or something else that happened.

  5. Oh the girls are just precious Kitty. Love the cheerleading picture too. Brings back lots of memories of my girls and a few of my grands cheering. And me! Yes girl, I was a cheerleader 7th-11th grade. Did not cheer my senior year. Those were the days! I just pinned the recipe. This sounds delicious. I am so glad that you have a fitness center to go to. We have a Silver sneakers in our community that I would love to attend but just cannot swing it in with my Yoga classes as the timing is off.   8. Great job negotiating on the price of the corn! I also love the pretty sunflower plate. It would also make a great wall decor!

    Regular exercise is so important so it's wonderful that you have access to a gym. I'm not coordinated enough to be a cheerleader, but I did enjoy the "Bring It On" movie.

  9. This is right up my alley Kitty, I love roasted vegetables, and I have a recipe for roasted Brussels & sweet potatoes with bacon too, such a delicious combo! Love your sunflower plate, pretty flower tea pot, and sunflower lady vase, so cute! Love your cheerleader and angel…$2.00 for an ear of corn, wasn’t it just yesterday when it was 10 ears for $2?!?!?!?! Yikes!

  10. Oh my! Don't think I've ever tried this combo before, but it sounds sooo tasty! I adore the pictures of your girls...our Chloe use to be the one they lifted high too...Harper is very brave! How wonderful when the grands are excited to see you/me for sure! Thanks for sharing. I think it's amazing you get to go to the gym for free. Awesome!

  13. Sweet pics of the girls and your recipe sounds so yummy. I would love to try it when I have the ingredients. Pretty sunflower and table setting. I would not have paid two dollars for an ear of corn either. Unbelievable how much food prices have increased and continue to go up. I am shocked when I check out at the supermarket!
