Blackberry Crisp


The 100+ degree days continue here in Texas, and my tea is inside today. I'm having some blackberry crisp and another of my tea subscription.       Even though the tea is in my pretty teacup, I'm transferring it to ice!

This blackberry teacup is a summer favorite of mine.


I took my three oldest granddaughters out for an early birthday celebration for Cissy because soon the girls will be too busy when August rolls around.  Cissy chose a pizza dinner.


Afterwards they wanted to go for frozen yogurt with toppings.


The girls love shopping at Bath and Body Works.  Ella found the area for 75% off and they were excellent shoppers.  I'm happy that they want a good value.

Blackberry Crisp

Blackberry Crisp

This is for a small batch recipe

Ingredients

  • 2 cups fresh blackberries, cleaned
  • ¼ cup white sugar
  • 2 teaspoons cornstarch
  • ⅛ teaspoon kosher salt
  • ½ cup flour
  • ⅓ cup old fashioned oats
  • ¼ cup brown sugar
  • ¼ teaspoon cinnamon
  • 4 tablespoons butter

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine ¼ cup white sugar (depending on sweetness), 2 teaspoons cornstarch (3 teaspoons if using frozen fruit which is generally watery) and ⅛ teaspoon kosher salt.
  3. Toss berries gently with sugar mixture.
  4. Divide the berries into two bowls 10 to 12 oz size, or divide into three 8 ounce bowls.
  5. Combine flour, rolled oats, brown sugar and cinnamon.
  6. Chop 4 tablespoon firm butter into small pieces and cut into the topping mix until the crumble is formed.
  7. Divide the topping over the two-three bowls.
  8. Bake until the top is golden brown. About 25 to 30 minutes. Cool on a rack for about 10 minutes and serve.

Notes

Top with vanilla ice cream or whipped cream.

  11. Your grandaughters are so sweet and growing up quickly. I really need to make your blackberry crisp as my favorite dessert growing up was blackberry pie baked in my grandmother's vintage trailer oven.

  16. So glad Kitty is enjoying this outing with her granddaughters. I feel like it's the time spent with the grandchildren that makes me live. As my 5 oldest (32, 29, 27, 24 and 20), 3 living and studying in another country, two already married and life already very busy with studies and work, I find it difficult to be together often. Fortunately the 4 youngest (14 to 20 years old) are still close by and I can see them more easily.
    Once again, I really enjoyed seeing your table for tea. The cup of blackberries is beautiful!

    My how your grand girls have grown!! Such pretty girls, all of them. :) I love your blackberry teacup; it's so pretty! I've already pinned your blackberry crisp recipe -- it looks just delicious!! When I was younger, I wouldn't eat blackberries because of all the seeds, but now I love them. :D Summer berries are just the best, aren't they?

    I hope you're doing well, Kitty. I hear that the temperatures are brutal in Texas this summer. Ours have been mostly in the 90's with lots of humidity. Uhhh. I think we're ready for fall here. Take care, my friend!

    I've never had blackberry crisp. Blackberries are on sale this week at $.99, so I am going to give this a whirl for tomorrow's dessert. Looks so good in your photo, and the recipe is easy. Hip, hip, hooray!!!!

  20. When it's so hot a nice tea on ice with lemon is what I love. Your blackberry crisp looks delicious. I'm sure you had a fun time shopping with your granddaughters, they are all growing up so fast. Sounds like school starts in August there too. Sorry I'm late visiting lately, just doing a lot around the house while we can't get outside.
