It's Flag Day and I'm having some Blueberry Delight to celebrate. This dessert would also be wonderful for the 4th of July!
This dessert/salad plate comes from one of my favorite sets of Mikasa dishes, called Berry Delight. Years ago, my daughter gave my beloved hubby and I a gift certificate to a Bed & Breakfast in Wimberley, Texas, and I fell in love with these dishes, that our meals were served on. Of course, I had to get a quick peek underneath to find the name and maker. My hubby and I scoured Mikasa outlets to find the dishes. The dinner plates, bowls, cups and saucers only have the outside pattern,and not the pretty berry motif that the dessert/salad plates have.
My sister gave me this pretty Grace's Teaware teacup, which I like with the plate.
My pitcher was a gift from my friend, Joy, when we first moved to Texas, almost 35 years ago. The Patriotic teddy bear was from Joy's late mother-in-law. They're both very special gifts.
This dessert can be made into a 9 x 13" pan for a large crowd, but I divided it into two smaller containers.
Blueberry Delight
The directions are for a 9 x 13" dish, but I divided the recipe and used a pie pan and a square baking dish.
Ingredients
- 11 graham crackers (1 and 1/3 cups crumbs, packed)
- 2/3 cup pecans
- 1/4 cup sugar
- 5 tablespoons butter, melted
- 8 ounces, cream cheese, softened
- 1 cup powdered sugar
- 16 ounces frozen whipped topping, divided
- 2 cans blueberry pie filling
Instructions
- Preheat oven to 350 degrees.
- In a food processor, blend the graham crackers and pecans until finely chopped. Stir in butter and sugar until well combined and press into the bottom of a 13×9 pan. Bake for 8 minutes and let cool completely.
- In a large bowl, beat cream cheese and powdered sugar until smooth. Using 1 container of whipped topping, beat in about 1 cup so there are no lumps. Fold in the remaining whipped topping from the container and spread the cream cheese mixture over crust.
- Add the blueberry pie filling in an even layer. Top with remaining container of whipped topping. Garnish with chopped pecans (or other type of garnish, such as sprinkles), if desired. Cover and chill for at least 2 hours or overnight.
