Pumpkin Bars with Cream Cheese Frosting


It's still so pretty out today, and therefore, it's a Halloween tea party on the patio.  My table covering is something I made several years ago, from a towel and quilt-as-you-go stockings.


Masked Mr.  Pumpkin Head is ready to host the Halloween tea party. 


I'm using my Royal Albert Duchess teacup today, and some Twinings pumpkin chai tea, which is perfect for the pumpkin bars.  



My indoor fairy garden is making an appearance outside for I've made it into a pumpkin patch.  Don't you love the Bakery fairy home?

Pumpkin Bars with Cream Cheese Frosting

I have been making these bars for years!

INGREDIENTS:

Pumpkin Bars
  • 3/4 cup butter
  • 2 cups sugar
  • 1 (16 oz.) can pumpkin
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons pumpkin pie spice
Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • about 5 cups powdered sugar
  • 1 teaspoon vanilla

INSTRUCTIONS:


  1. For Bars: Cream butter and sugar together. Blend in pumpkin and eggs
  2. Mix remaining ingredients together and add to creamed mixture. Spread in a greased 10" x 15" pan or for a cake, into a 9" x 13" pan. Bake at 350 degrees for 25-35 minutes, depending on the size of the pan. When Cooled frost with Cream Cheese Frosting.
  3. For Frosting: Blend cream cheese and butter well. Gradually add powdered sugar and beat until smooth. Add vanilla and blend well.

    Yummy! I haven't made pumpkin bars in years. I love the cream cheese frosting! I did bake my first 3 loaves of pumpkin bread last Friday! Usually I would have made it 2 or 3 times by now....but the diet....:( Love your little tea party on the patio....the fairy garden/pumpkin patch is so cute! Mr Pumpkin head looks quite comfy sitting there with you! That table covering is adorable! Love all the fabric pieces together!Of course, the tea cup is so pretty. Enjoy the nice weather while you have it! It has cooled down here a lot but there is supposed to be a gradual warm up this week. Can't wait! Happy Halloween!

  17. Oh, I love how your little fairies have a pumpkin patch! Too adorable. I had to buy a somewhat inferior pumpkin roll for dessert tonight -- still no kitchen -- your pumpkin bars look ever so much better! (Okay, I didn't have to buy it :)
    We are having a quiet Halloween, only 16 trick or treaters, and I think they're done. My husband says it's more candy for us, haha!

  30. Kitty, how fun that it was such a pretty day that you could enjoy and outdoor tea. We have been having gorgeous weather here as well. We had a record number of trick or treaters because of it.
