Strawberry Pie

How about joining me for some strawberry pie at the coffee table?  We've actually had rain and cooler temperatures in Texas this week and we'll stay indoors today.


I'm using my one of my favorite dessert plates on top of my green and white polka dot plates to coordinate with my polka dot table covering.  Of course we're using the green Dollar Tree goblets!


This strawberry planter box was a gift from my friend, Kathryn.  I love the mosaic tile on it and the strawberry motif.


If I had to choose a recipe that I have made more than any other, it's probably this recipe for strawberry pie!  I cut the recipe from The Columbus Dispatch, over 40 years ago.  Our family loves this pie.  In fact, my hubby and I have been known to eat it in two days!!  Once cut, it doesn't keep very well...that's the truth, and now you know why we HAVE to eat it so quickly. 

1 pre-baked pie shell

1 quart strawberries, cleaned & hulled & set aside

3/4 cup sugar
3 T. cornstarch
1 cup water
2 T. light corn syrup
pinch of salt

3 T. strawberry gelatin

Combine sugar & cornstarch in a heavy saucepan & stir.  Add water, corn syrup & salt.  Cook until thickened & clear in color.  Remove from heat & add gelatin, stirring well to dissolve the gelatin.    The original recipe said to add red food coloring, but I never do.  Let  cool.

Pour over the berries. I usually cut the berries in half.  Mix gently & pour into the baked pie shell.  Chill.  Top with whipped cream.

Serves 6-8 (or 2 people in 2 days!!!!)

My poor poor hubs is horribly allergic to strawberry pie so I don't make it anymore but sometimes bring it to a party or order it at a restaurant.........not nearly enough, it's SO DANGED GOOD!!!!

  5. Yum, yum, yum!! That pie looks fabulous, Kitty and I adore your strawberry plates. They remind me of my friend, Marge, who went home yesterday (yeah!!). Her kitchen is full of strawberry items - I have loved giving her many over the years. I know she would love this post!

  14. Kitty, the table looks wonderful.. I love those strawberry plates and the polka dots!! This pie reminds me of a german torte. Especially the filling. Gelatin and fruit and a dollop of whipped cream. Except they use a sponge cake bottom instead of a pie. Looks scrumptious, my friend.. xo marlis

    I have seen plates similar to yours at Pier 1, and I have wanted to buy them for a couple of years. Maybe someday! Yours are really cool!!!

  20. I've never seen plates like that. I saw some strawberry themed dinner plates at Cracker Barrel yesterday and resisted. It was hard. It's just such a happy, summery theme to me. Loved how you called strawberry pie "Summer on a plate". So true! Your recipe looks like something I could do. I realized just recently that I'm not a great pie baker and decided to practice the skill. I've never made a strawberry one.

    This looks absolutely delicious!! And your recipe is SO simple! The first time I had strawberry pie was at my father's steakhouse in Toronto. I was about twelve, and one taste of this scrumptious pie sent me to pie paradise!! Thanks for bringing back such sweet memories. Strawberry anything is big in my book!

  30. This is an excellent recipe! My grandmother in law's recipes were given to me to copy and this was one of them. I made it for Easter and it was a huge hit! It's a perfect addition to your table!
