Blueberry Crumb Bars

For my garden tea today, I've made some Blueberry Crumb Bars,  and to cool off, we're  having iced tea.  Care to join me? 

I'm using a Shooting Star Hydrangea as my centerpiece.  Can you see the stars shooting out from the plant?
What's better for a summer dessert than Blueberry Crumb Bars?  Oh, these are soooo good and perfect to take to a get together.  You can cut the bars large or make them smaller for a crowd.  I've adapted this from one found on  I replaced the shortening with butter, changed out some of the sugar and added some spices.  I hope you give these a try!

For the crust and topping:

3 cups flour
1/2 cup brown sugar
1/2 cup white sugar
1 t. baking powder
1/2 t. salt
1 cup cold butter (2 sticks)
1 egg, beaten
For the Blueberry filling:
1/4 cup sugar
4 t. cornstarch
1/2 t. cinnamon
1/4 t. freshly grated nutmeg
4 cups blueberries


  1. Preheat the oven to 375 degrees F.  Grease a 9x13 inch pan.
  2. In a medium bowl, stir together 1/2 cup  brown sugar, 1/2 cup white sugar, 3 cups flour, salt, and baking powder.  Use a fork or pastry cutter to cut in the butter.  Mix in the egg. Dough will be crumbly. Pat half of dough into the prepared pan.
  3. In another bowl, stir together the sugar and cornstarch, cinnamon and nutmeg.  Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
  4. Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.  You can store these in the fridge.

    I don't doubt that these will also be a big hit. Blueberries are on sale around here right now. My poor sister won't be able to pick our family's bush this year, due to her total knee but I'm hoping her sons pitch in & get some of them before the birds devour them all. They put netting over the bushes but they still manage to steal a considerable few.

  18. I just love the presentation of this. I don't think I've ever seen a star hydrangea. If I have, I was too daft to notice the starburst. The blueberry crumb bars looks delicious, and it happens to be blueberry season around here. I need to get picking!

    These blueberry crumb bars sound delicious and they look so pretty with your red, white, and blue table setting. I love the plates with the blue rim and stars (so pretty) and your linens and basket. I've never heard of a shooting star hydrangea -- that is so pretty! Are they indigenous to Texas?
