Cake:
2 cups sugar
2 cups flour
1/4 cup cocoa powder
1 t. baking soda
1/2 t. salt
1 t. cinnamon
1 stick butter
1/2 cup oil
1 cup water
1/2 cup buttermilk
2 eggs, beaten
1 t. vanilla
Sift together all the dry ingredients into a large bowl.
Put the butter, oil, water, buttermilk into a saucepan and bring to a boil. Add to the dry ingredients and mix well. Add the beaten eggs and the vanilla.
Pour into a greased 9 x 13 inch pan, or a greased jelly roll pan. Bake at 400 degrees for 20-30 minutes. While cake is baking, make the icing.
Fudge Icing:
1 stick butter
1/4 cup cocoa powder
6 T. milk or buttermilk
1 box powdered sugar (about 4 cups)
1 t. vanilla
pinch of salt
Bring the butter, cocoa powder and milk to a boil. Add the powdered sugar, vanilla and salt. Mix well and pour over cake right when it comes out of the oven.

I love chocolate sheet cakes, but the cinnamon is a new twist, will have to try that, sounds good!

ReplyDeleteBack when I could eat sugar and lived in Texas....I loved to make a big chocolate sheet cake! This looks divine! And the ice cream would go good with it, too! Enjoy your day! I'm going to look for some sugar free fudge bars in the freezer! heehee!

ReplyDeleteTexas sheet cake with cinnamon! What could be better than that? I haven't seen the Texas sheet cake recipe in years. An old friend of mine used to make it in a jelly roll pan...thin-ish cake and yummy icing. I always think the buttermilk is what makes it so good. Yum, Thanks for sharing the recipe.

Hi Kitty, Texas sheet cake is my favorite cake ever; I've made it many times. A twist is to bake it until it's almost done (about 2" left); cover the top with marshmallows, return to the oven for the 2". You still frost it. It adds a layer of gooey goodness. This icing is super good too. Glad you shared your recipe so others can enjoy it too. Take my word for it, ladies: THIS CAKE IS FABULOUS!!!

Wow, that looks like a delicious cake. I love the idea of adding cinnamon. If I could, I'd hop over to your house for cake and milk....I know that sounds childish, but I still prefer a cold glass of milk with chocolate cake. Thanks for joining me at Your Cozy Home Party this week.

Kitty, I grew up on this very cake recipe and I make it all the time for family and friend get togethers. I have never found another nearly as good as the plain ole Texas Sheet Cake.

ReplyDeleteI'm going to make the cake and freeze it...then, the day of my Bunco gathering, I'll take it out of freezer, warm it just a bit and pour on the fabulous fudge icing. Think that will work or should I just make the cake fresh that morning.?
Actually, it doesn't take long to whip it up so guess I'd better do that.
