Pink Pizzelles

Even though my Mother-in-law is not Italian, she used to make pizzelles,  which are my hubby's and daughter's favorite.  I had some Amazon $$ and decided to buy a pizzelle maker.  My Italian friend gave me her recipe and even some of her favorite anise oil that she orders special just for these cookies.   She claims that the oil  makes all the difference in flavor and she should know!!  I call her the "Pizzelle Queen", for she freely shares these favorite cookies with everyone she loves.  They are fun cookies to make and especially to eat.  I decided to color some pink, just for fun!  Here's the recipe, which can easily be doubled or tripled.

3 eggs
2 t. baking powder
1 t. vanilla
1/2 t. anise extract or oil
1 3/4 c. flour
3/4 c. sugar
1/2 c. butter, melted and cooled

Beat eggs and sugar until light yellow, 2-3 minutes.  Add cooled, melted butter and flavorings.  Beat until blended.

Sift the flour and baking powder and add to the egg/sugar mixture. 

Heat pizzelle maker, place about 1 T. of batter on grid, just behind the center pattern.  Bake until golden, about 30 seconds.  Remove and cool on rack. 

Yield: 30 pizzelles (these freeze well)

  3. I married an Italian and that is his favorite sweet of all time....well, maybe not PINK ones, though, haha.

    His mom makes them all the time - and he craved them so much...so I bought him a pizelle iron for his b-day a few years back and HE makes them all the time. He says it helps being Italian to make really GOOD ones, haha.

  5. Pizzelles remind me of lace, they are so cute. Love the idea of pink. How clever. We worked at Williams Sonoma one Christmas and sold a lot of pizzelle machines.

  6. Those pizelles are gorgeous besides looking so delicious. I have a friend who makes them too and they are so good.

    Yesterday for my Eiffel Tower Parisienne Birthday luncheon (I'll post about it next week) I made your marshmallow icing for the birthday cupcakes. Wow was that ever fast and GOOD! It's a winner Kitty. Have already shared it with one of my daughters who likes to do some cake decorating. I'm going to put a link to you when I post the food for the luncheon. It was so fast and easy and quite delicious. YUM!

  8. I have always though pizelles were so fancy and fun but I've never tried them. I have a waffle cone maker that I think may also work for this. I've got your recipe pinned and I'm going to give it a try. Thanks so much for the idea!

  11. I love pizzelles, I only make them for holidays and special occasions as my recipe makes a ton of them. I also love them flavored with vanilla and a little cinnamon. xo P.S. The plate your great aunt painted is beautiful.

  21. I have been making pizzelles since I got married 37 yrs. ago. My mom made them every Christmas and I have her recipe. It makes LOTS of them; uses a dz. eggs and 1 lb. butter but I give a lot of them away as gifts and I figure since I have to get the iron out and everything I might as well make a lot of them. I have never made them pink; I might just do this for a tea party.

  32. The talent you have in the kitchen....I just love it!!! I figured there had to be a special contraption in which to make them because the shape is just so intricate and pretty. I don't eat a lot of cookies these days, but I remember munching pizzelles at many weddings in the past. SO tasty! Pink, my favorite color, just makes them even more special!!!     These are new to me. I am definitely not Italian but The Mr. is half Italian. His grandfather ran a bakery in Sacramento years and years ago. I wonder if he made these...
