1 (1 lb. 2 1/2 oz.) pkg. devil's food cake mix
2 eggs, slightly beaten
1 T. water
1/2 c. shortening
confectioners sugar
Combine cake mix, eggs, water and shortening. Mix with a spoon until well blended (I actually use my mixer for this part).
Shape dough into balls the size of small walnuts. Roll balls in confectioners sugar (coat liberally).
Place on greased baking sheets. Bake in a 375 degree oven for 8-10 minutes.
Makes about 48 cookies.

I usually have no problem coating ANYTHING liberally with sugar of any kind! YUM!
ReplyDeletei bake these cookies all the time except I call them Earthquake cookies. check out my recipe, it varies a bit. I use cocoa and, when I make the batter I leave it overnight in the fridge to harden. The next day I make the balls and cover them with confectioner's sugar and put them in the oven, You'll find that this really helps them rise and CRACK deeper. Either way, these are my faves!
