Mermaid Ice Cream
Who's ready for some mermaid ice cream this summer??
Harper and Hayden came over to spend the day with me, and we made some special ice cream.
Don't you love how Harper decorated this batch?
Here she is busy decorating graham crackers with blue frosting to go along with our theme.
I think she's proud of her accomplishments, don't you? A friend of mine shared this cute idea with me of using the frosting. fish crackers, "bubble" type sprinkles and mini fish that come with the frosting. It kept Harper busy while her sister took a nap. Harper said, "no thank you" when asked if she needed a nap!
Hayden just likes to play, and is not really interested yet in cooking!
My youngest son, shown with his little girls, who spent the night here, celebrated his birthday over the weekend. He requested a Creme Brulee cheesecake and sent me a recipe that he found. He seemed to like it, and even four-year-old Harper, ate a slice.

Mermaid Ice Cream (no-churn)
This is another fun no-churn ice cream! I just can't tell you how rich and creamy this ice cream is, and so easy!!
ingredients:
- 2 cups heavy cream
- 1 can sweetened condensed milk
- 2 teaspoons vanilla
- food coloring
- sprinkles
instructions:
How to cook Mermaid Ice Cream (no-churn)
- Whip the heavy cream in your mixer until stiff peaks form.
- Add the sweetened condensed milk and vanilla.
- Divide the mixture into several bowls. We used four bowls, and colored one purple, one teal, one pink, and left some white.
- Alternate the colors in a loaf pan or food safe container, and then swirl with a knife.
- Add the sprinkles of your choice.

Blackberry No-Churn Ice Cream
We are nearing 100 degrees and today I'm cooling off with an easy recipe for ice cream. I have an ice cream maker that I like to use with the kids, but I've been wanting to try these no-churn varieties. Blackberries were on sale, and I saw this recipe and knew I had to make it. What better way to use my blackberry teacup than to enjoy some blackberry ice cream on a hot summer day.

Blackberry No-Churn Ice Cream
There is no excuse not to make ice cream with these simple, no-churn recipes! Oh my goodness, is this ice cream so rich and creamy, and there are only four ingredients. Please try this easy ice cream with whatever fruit you would like.
ingredients:
- 2 cups blackberries, or berries of your choice
- 2 cups heavy cream
- 1 can sweetened condensed milk
- 1 teaspoon vanilla
instructions:
- Chop up the blackberries. You can use a food chopper, or just smash them with a potato masher or a pastry blender.
- Beat the heavy cream with an electric mixer until stiff peaks form.
- Add the sweetened condensed milk, vanilla and the chopped blackberries. Beat again until well combined.
- Spoon into a freezer safe container with a lid, and freeze for 5-6 hours or overnight. Enjoy!

Sweet Milk Ice Cream and Grandkids
My late beloved Mom would've been 90 on June 30th. I was able to have all my grandchildren here to get a picture together.
Caiden and Cissy made my Mom's favorite angel food cake at Cooking Camp this past week. We also made some homemade vanilla ice cream to have with it, which was very tasty!
Cissy spent the night and we made some patriotic red, white and blue krispie treats and swirled some white chocolate on them, and sprinkled them with sprinkles. We used a star cookie cutter and put some on lollipop sticks, and the leftovers we rolled into balls, and put them on sticks, too. We put two each in cellophane bags as party favors for all the kids. Cissy is a great helper!

Sweet Milk Ice Cream
The kids and I made this to go along with my late beloved mom's favorite angel food cake .
ingredients:
- 1/2 cup whole milk powder
- 1 cup sugar
- 2 tablespoons tapioca starch (we used 1 tablespoon cornstarch)
- 1 cup heavy cream
- 3 cups whole milk
- 2 tablespoons light corn syrup
- 1 tablespoon vanilla
instructions:
How to cook Sweet Milk Ice Cream
- Instructions
- In a large saucepan, whisk together the dried milk, sugar, and tapioca starch.
- Add the remaining ingredients and whisk until smooth.
- Set the saucepan over medium-high heat, and cook the ice cream base, stirring constantly, until it becomes just slightly thicker than heavy cream; it will thinly coat the spoon or spatula you're using.
- Remove the pan from the heat, and pour the base into a heatproof mixing bowl, stirring occasionally as it cools to prevent a skin from forming.
- Once the base has cooled to just slightly warmer than room temperature, lay a piece of plastic wrap on the surface, again to prevent a skin from forming.
- Transfer the bowl to the refrigerator for at least 4 hours, to chill completely.
- Freeze the base in an ice cream maker according to the manufacturer's directions.
- Transfer the ice cream to a covered container, and freeze until ready to serve.
- The ice cream may firm up a bit as it freezes, so leave it at room temperature for 10 to 15 minutes to soften before serving, if necessary.

Patriotic Ice Cream Sandwiches
Please join me for treats inside today! I was afraid that my ice cream sandwiches would melt if we went outside in our 90 degree day.
Caiden, who is going into 9th grade still wants to join in a Nana's Cooking Camp this summer, along with Cissy. Didn't their cookies turn out so beautifully?
I think they like them, don't you? I have to tell you that these are so delicious!! This Nana likes them, too.
Harper didn't want to help with the baking, as she was too busy playing, but she did roll her ice cream sandwich in the sprinkles, and enjoyed eating it.
Yield: About 15 sandwiches

Patriotic Ice Cream Sandwiches
These are so good, and could be used with other flavors of cake mix, and ice creams. Since cake mixes are no longer 18.50 ounces, I buy an additional box to keep on hand to add to recipes. I have a scale and the kids get to weigh out the additional mix.
ingredients:
- 1 (15.25 ) box of red velvet cake mix + 3.25 ounces of additional cake mix (I actually used white cake mix to add, but chocolate would be good)
- 2 eggs
- 1 tablespoon water
- 1/2 cup shortening
- Ice cream of your choosing
- Sprinkles of your choosing
instructions:
How to cook Patriotic Ice CreamSandwiches
- Preheat oven to 375 degrees.
- Combine cake mix, eggs, water, and shortening. Mix with a mixer until well blended.
- Using a small scoop, scoop the dough, and shape with hands into a ball, trying to get uniform sizes.
- Place on parchment paper and bake for 8-10 minutes. Cookies will flatten out as they bake and have a crackly appearance.
- Remove from oven and let sit for about 5 minutes, and then remove the cookies to a cooling rack, and allow to cool thoroughly before filling with ice cream.
- Take scoops of ice cream and place on one cookie. Place a second cookie on top, and try to squeeze together.
- Roll the edges of the ice cream into a bowl or plate of sprinkles.
- Wrap individually in wax paper or plastic wrap. Store in a container, and freeze.

Fresh Fruit Ice Cream
As we are putting up with 100 degree days here in Texas, the kids and I thought ice cream would be a good idea, and besides, July is National Ice Cream Month!! We loved this quick and easy strawberry ice cream. My serving dish is this cute Mary Engelbreit teacup that my friend, Bea, gave me.

My sis sent home this hen and chick plant that she packed into a wet paper towel and into a plastic bag, which I carried home in my suitcase from Ohio. I put the plant in this whimsical lady vase that my daughter gave me. Don't the chicks look like curls drooping down?
Here are my happy cooking campers with our yummy ice cream. What joy these little people bring to me!
We decided to use some little goblets for serving. I think the ice cream was a hit!
My youngest daughter-in-law found this soft jersey knit at Hobby Lobby, and I made my littlest granddaughters matching outfits.
Big sister, Harper, loves having Hayden wear something matching with her.

Fresh Fruit Ice Cream
I taught the kids to make our own half-and-half, by using half heavy cream, and half milk. This ice cream couldn't be simpler and it tasted great, too! We used strawberries, but blueberries, raspberries, peaches or blackberries would be good, too. If you'd like vanilla ice cream leave out the mashed fruit, and increase the vanilla to 1 tablespoon.
ingredients:
3 cups half-and-half
1 (14-ounce) can sweetened condensed milk
1 cup pureed or mashed fruit
1/2 tablespoon vanilla
instructions:
Combine all ingredients.
Put in ice cream freezer container and freeze according to manufacturer's directions.

Cookies and Cream Ice Cream and a Craft
We had an ice cream party with our favorite chocolate covered cookie balls at Nana's Cooking Camp this past week. It was too hot to take a picture outside of the ice cream for fear of melting all that yumminess. I decided to use a pretty teacup for serving!
Even my 13-year-old grandson, Riley came to participate!
My son , who is the kids' Uncle Mike , joins in and heads up the art part of the camp. Little two year old Harper came to spend the day with us. We like to start them out early in cooking and crafting! Harper loves the cookie balls!
We did this super fun project that I found on Pinterest. You use 4x4" tiles (16 cents!!) from the home improvement store and you color on them with colored Sharpies. After that you use rubbing alcohol and a dropper and drop droplets onto the tile and see what happens. It's very exciting to watch! If you don't like your design, you can wipe it clean with rubbing alcohol and a paper towel.
Here are the two that my son and I did. After they're dry, you spray them with a clear spray to protect them. The kids loved doing them, and so did we!!

Cookies and Cream Ice Cream
My grandson, Caiden, suggested that we make cookies and cream ice cream, and so we did just that. It was a big hit!
INGREDIENTS:
- 1 cup milk
- 3/4 cup sugar
- pinch of salt
- 2 cups heavy cream
- 1 tablespoon vanilla
INSTRUCTIONS:
- In a medium bowl, use a hand mixer on low speed, combine the milk, sugar and salt until the sugar is dissolved. Stir in the heavy cream and vanilla. Cover and refrigerate for 1-2 hours, or overnight.
- Turn on the ice cream maker (or follow the directions for your particular ice cream machine); our the mixture into the frozen freezer bowl and let mix about 15-20 minutes. At this point, the kids and I added the broken chocolate sandwich cookies, and let the machine mix it for a brief time. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in the freezer for about 2 hours.

Easy Vanilla Ice Cream
Quick, we have to ice our ice cream before it melts in the 100 degree days we've been having!
This Olde English Countryside teacup, by Johnson Brothers, is a favorite of mine, because I love cottage scenes. We'll pretend that we are in the cool, countryside of England.
This Price Kensington cottage teapot was a last year's purchase from eBay. When it arrived, there was a big chip out of the bottom right corner. I wrote the seller and wanted to send it back, but he offered to refund some of the money, and I decided to keep it. I filled in the large chip with spackling, let it dry, and my son, Mike, painted it, blending it perfectly, and varnished it. You can't even tell, can you??
I'm using my crystal wedding goblets, which are Elyse, by Franciscan, for my hot fudge sundae. Don't you love how I put some hot fudge sauce in the very bottom as a nice surprise? Yes, I ate the whole thing!

(I made the whole recipe, but had to only put half at a time in my Cuisinart Ice Cream Maker)
1 51/2 -ounce package vanilla instant pudding and pie-filling mix
1 1/2 cups sugar
4 cups whole milk
1 12 -ounce can evaporated milk
Combine the pudding mix and sugar in a large bowl. Slowly stir in the whole and evaporated milks. Continue stirring until the mixture is smooth. Churn the mixture in an ice cream maker according to the manufacturer's directions, then freeze until firm.
1 1/2 cups sugar
4 cups whole milk
1 12 -ounce can evaporated milk
Combine the pudding mix and sugar in a large bowl. Slowly stir in the whole and evaporated milks. Continue stirring until the mixture is smooth. Churn the mixture in an ice cream maker according to the manufacturer's directions, then freeze until firm.

This week at Nana's Cooking Camp, these two grands loved making the easy vanilla ice cream. We also made Rice Krispie treats and decorated them with colorful sprinkles that they picked out from my cupboard. Their Uncle Mike gave a lesson in drawing the darling penguins, to go with our icy theme, and then we used watercolors to paint them. Top left is mine, top right is Mike's; bottom left is Cissy's and bottom right is Caiden's.
