It's back to been downright cold here in Texas. I fixed Shepherd's Pie (actually cottage pie because it's with beef) for St. Patrick's day, and fixed a skinny grasshopper pie. Why skinny, you ask? Well, I went to get my carton of mint chocolate chip ice cream from my freezer, and half of it was gone! LOL!! My son ate it, as he didn't know I was planning it for something. He said that the ice cream "was really good, by the way!" The ice cream came from Aldi, and yes the other half was very good, but made for a skinny pie!
The pretty set was from my friend, Michele, and I love it for Springtime with the pansy pattern. The lid on the teapot says, "Delight yourself in the Lord."
Yield: 6-8
Grasshopper Pie
Use your favorite mint chocolate chip ice cream and hot fudge sauce.
Ingredients
- Oreo cookie crust
- Mint chocolate chip ice cream (see NOTE)
- Hot Fudge Sauce
- Cool Whip or whipped cream
- Garnish with Andes Mints, Girl Scout Thin Mints, or chocolate shavings
Instructions
- Soften your container of ice cream so that it easy to spread into the crust.
- Freeze until firm.
- When ready to serve, heat the hot fudge sauce up, drizzle on, and add some whipped cream and garnish.
Notes
Make sure you put a note on your ice cream if you plan on using it for something, or you'll have a skinny version like mine!
Stuffed Peppers are one of my most favorite meals! I hope you'll try this wonderful recipe.
Yield: 4-6
Stuffed Peppers
I love using red peppers for this recipe!
Ingredients
- 1 lb. ground beef
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1/2 teaspoon pepper
- 1 can tomato soup
- 1 cup grated Mexican blend or cheddar cheese
- 1 cup cooked rice (I like using the precooked brown rice that I buy in a small tub from Costco)
- 3-4 large bell peppers, cut in half
Instructions
- Cook the peppers in a large pot of boiling, salted water for 5 minutes. Remove the peppers with tongs & set aside. While they're cooking, brown the beef, onion & garlic until the meat is no longer pink. Drain grease. Add chili powder, pepper, soup & rice. Stir well & simmer for 5 minutes. Add 1 cup of cheese to the meat mixture & stir until melted. Spoon the mixture into the pepper halves. Top with extra cheese. Bake at 350 degrees for 10 minutes.
Notes
If you wish to make these earlier in the day & refrigerate them, bake them for about 25 minutes or until heated through.
I hadn't seen Ella since December and was missing her! She said that Saturday would work, and I was happy to see her. She said that Avery could go, too, and guess who are driver was???
Avery is turning 16 in May and drove us to lunch and shopping at Target. She is a wonderful and confident driver, and I was happy to be with both of these granddaughters. There's nothing like having your grandchildren drive you around!!

How exciting fo Avery to have her driver's permit! She's getting some driving, while you have transportation to lunch and Target. It's a win-win for everyone.

Here in CT new drivers or those with a permit are only allowed to drive with an adult in the car (no siblings or other people under the age of 18) so we rarely get to have our new drivers actually drive us anywhere; I bet it was a real treat to get to spend the day with 2 of your granddaughters.
