Fluffy Strawberry Pie with Pretzel Crust




It's such a beautiful Easter Monday to enjoy the sunshine, even though it turned a bit colder.  Colorful tulips and Springtime colors make the day lovely.  I'm sipping some delicious Strawberry Dream White Tea from my dear friend, Marsha.  It is so good and perfect with the pie.

Fluffy Strawberry Pie with Pretzel Crust

Fluffy Strawberry Pie with Pretzel Crust

This is a perfect Springtime or Summertime dessert. I adapted the recipe slightly, and I hope you enjoy!

Ingredients

  • Pretzel Crust
  • 1 1/4 cups crushed pretzels
  • 1/4 cup granulated sugar
  • 1/2 cup butter or margarine, melted
  • Pie
  • 3/4 cup boiling water
  • 1 package (4-serving size) Jell-O™ strawberry-flavored gelatin
  • 1 teaspoon grated lime peel (I used lemon)
  • 1/4 cup lime juice (I used lemon)
  • 1 1/2 cups whipping (heavy) cream
  • 3/4 cup powdered sugar
  • 2 cups strawberries, slightly crushed

Instructions

  1. In medium bowl, mix all crust ingredients. Press mixture firmly against bottom and side of 9-inch glass pie plate.
  2. In large bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Stir in lime peel and lime juice. Refrigerate about 1 hour or until very thick but not set.
  3. Beat gelatin mixture with electric mixer on high speed about 4 minutes or until thick and fluffy; set aside. In chilled large bowl, beat whipping cream and powdered sugar on high speed until stiff peaks form. Fold whipped cream and crushed strawberries into gelatin mixture. Pour into crust.
  4. Refrigerate about 8 hours or until set. Store in refrigerator.





Two of my grandsons recently got engaged!  On the top photo is of Elizabeth's ring from Caiden, and on the bottom photo is Kendyll's emerald ring from Connor.



My oldest son, Tim, and I recently went to Harper's mountain biking race in Muenster, TX.  Top left is Harper ready to take off in her age group.  Bottom left is Hayden who is the most patient, supportive sister!  In the next photo is Harper coming in and almost to the finish line.  Top right is Harper at the second place winning spot, and then below that is a circle with  Harper way up in the mountain trail.  Below that  photo is Hayden, me and Harper enjoying some shade at a winery nearby after having some pizza and hummus.  The last photo is Harper's mountain biking fan club of Kevin, Harper, me, Hayden, Tim, and Kristen.

Chocolate Strawberry Bundt Cake


My birth month is February and I am using my beautiful trio set that my late Great Aunt Kitty painted for me, which is one of six different sets.  I keep the plates displayed in plate racks on either side of my hutch because they're so pretty. My angels are gracing my table in a tray.  My youngest daughter-in-law was telling me how someone she knows has a lot of clutter.  I told her that I have a lot of stuff, and she said, "but yours in controlled clutter".  It's so true, as I have trays, all over with things that are gathered to control my clutter artfully!  LOL!  Do any of you have controlled clutter or are you a minimalist?  


Isn't this such a pretty violets pattern?

Chocolate Strawberry Bundt Cake

Chocolate Strawberry Bundt Cake

I used my recipe for Chocolate Pistachio Cake, but changed it to use strawberry cake mix.

Ingredients

  • 1 box strawberry cake mix
  • 1 box vanilla instant pudding mix
  • 1/2 cup oil
  • 3/4 cup water
  • 4 eggs
  • 3/4 cup chocolate syrup
  • powdered sugar to decorate the top or a couple of scoops of prepared chocolate frosting, melted

Instructions

  1. Prepare a bundt pan with cooking spray or a cake release. Preheat oven to 350 degrees.
  2. Mix together the cake mix, pudding,oil, water and eggs at med-hi speed of a mixer until blended.
  3. Pour 3/4 of the batter into the prepared pan.
  4. Add the 3/4 cup chocolate syrup to the remaining batter and mix well. Pour this on top of the other batter, and slightly swirl with a knife.
  5. Bake for 50-60 minutes, or until toothpick comes out clean.
  6. Cool on wire rack for about 10-15 minutes before flipping over and removing from pan. Cool completely.
  7. When completely cool, sprinkle with powdered sugar or melt a couple of scoops of prepared chocolate frosting in the microwave, just until pourable.
  8. Drizzle the frosting over the top of the cake, and sprinkle with festive sprinkles, if desired.




I recently read that birds like to eat egg shells.  After cleaning the egg shells, you need to sterilize them in a 250 degree oven for 10 minutes. Alternatively,  you can boil the eggs shells.   After they are cool, you can break them up for the birds.  Do any of you do this?  I guess it's a great source of calcium for the birdies. 



I had a Valentine brunch with Tim, Julie, Avery, Ella, and Avery's boyfriend, Landon.  It's so nice to see all those smiling faces.

Strawberry Cream Pie

 How about we cut into this luscious Strawberry Cream Pie?  I have never made this pie, but it comes from my Better Homes and Gardens Desserts Cookbook, 6th printing 1967.  I have been sewing so much during this quarantine time, but I really LOVE baking, and decided to check through some of my old cookbooks that I have collected over the years. Would you like to use my snack set that my friend, Linda, gave me, or would you like to use my Roy Kirkham Strawberry Fields teacup?

 I was asked to make 40 masks for nurses who wear the cloth masks over their N-95 masks to make the N95's last longer.  I did all these in one day and didn't think I'd ever want to see another mask again.  The best part, however, was a friend cut all of these and even basted in the elastic, and brought them to me.  That was a gift!

To add some joy to my life,  I wanted to make hooded towels for Harper and Hayden.  Harper chose the bunny design and Hayden wanted the monkey.  The designs are Animal Peekers 5  from Designs by Juju. I've been making hooded towels for over 40 years, but this video shows how to make a self-lined one, which is wonderful!  You can see it here.

Strawberry Cream Pie

Strawberry Cream Pie

If you have the time to make this, it is well worth it!

Ingredients:

  • 1 pastry shell (9 inches), baked
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • GLAZE:
  • 1/2 cup crushed strawberries
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 3 cups fresh strawberries, halved
  • Whipped cream, optional

Instructions:

How to cook Strawberry Cream Pie

  1. Cover bottom of pie shell with nuts if desired; set aside.
  2. In a large saucepan, combine the sugar, cornstarch, flour and salt; gradually stir in milk. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat and stir a small amount into egg; return all to the saucepan. Cook and stir until almost bubbly. Reduce heat; cook and stir 1-2 minutes more (do not boil). Remove from the heat; stir in vanilla. Cool to room temperature. Whip cream; fold into filling. Pour into pie shell. Chill for at least 2 hours.
  3. About 2 hours before serving, prepare glaze. Combine crushed strawberries and water in a large saucepan; cook for 2 minutes; sieve. Combine sugar and cornstarch; gradually stir into the berries. Cook until thick and clear, stirring constantly. Cool for 20 minutes.
  4. Meanwhile, arrange berry halves over filling; pour glaze evenly over berries. Refrigerate for at least 1 hour. Garnish with whipped cream if desired.

Fresh Fruit Ice Cream

 As we are putting up with 100 degree days here in Texas, the kids and I thought ice cream would be a good idea, and besides, July is National Ice Cream Month!! We loved this quick and easy strawberry ice cream.  My serving dish is this cute Mary Engelbreit teacup that my friend, Bea, gave me.  

 

 My sis sent home this hen and chick plant that she packed into a wet paper towel and into a plastic bag, which I carried home in my suitcase from Ohio.  I put the plant in this whimsical lady vase that my daughter gave me.  Don't the chicks look like curls drooping down?

 Here are my happy cooking campers with our yummy ice cream.  What joy these little people bring to me!

 We decided to use some little goblets for serving.  I think  the ice cream was a hit!

 

 My youngest daughter-in-law found this soft jersey knit at Hobby Lobby, and I made my littlest granddaughters matching outfits. 

 Big sister, Harper, loves having Hayden wear something matching with her.




Yield: six or more servings, or about 1 and 1/2 pints

Fresh Fruit Ice Cream

I taught the kids to make our own half-and-half, by using half heavy cream, and half milk.  This ice cream couldn't be simpler and it tasted great, too! We used strawberries, but blueberries, raspberries, peaches or blackberries would be good, too.  If you'd like vanilla ice cream leave out the mashed fruit, and increase the vanilla to 1 tablespoon.

ingredients:

3 cups half-and-half
1 (14-ounce) can sweetened condensed milk
1 cup pureed or mashed fruit
1/2 tablespoon vanilla

instructions:

Combine all ingredients.
Put in ice cream freezer container and freeze according to manufacturer's directions.

Strawberry Pie for a Happy 40th Birthday to Tim!


 My oldest son, Tim, asked me to make a strawberry pie for his 40th birthday celebration, and I was happy to oblige!

 I'll save a piece of pie for later, if there's any left, and have a cup of tea with this Royal Grafton teacup that my friend, Rosie, gifted me with, from her late mom's collection.

 

 Here's my handsome son Tim, who came over to celebrate his 40th birthday with his two beautiful girls.


 These are the photo blocks that my son Mike and I made for his gift.  It was fun for all of us to look at the pictures through the years. I got this wonderful idea several years ago from my friend, Debbie at Mountain Breaths



Yield: 6-8 pieces

Strawberry Pie

I have been making this pie since I was first married, back in 1970, and it has always been a family favorite.

INGREDIENTS:

  • 1 quart of strawberries, cleaned and hulled
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 cup water
  • 2 tablespoons light corn syrup
  • pinch of salt
  • 3 tablespoons strawberry gelatin
  • A pre-baked pie shell

INSTRUCTIONS:


  1. Combine sugar and cornstarch in a medium saucepan.
  2. Add the water, corn syrup, and salt to the saucepan, and mix. Cook until the mixture bubbles and then becomes more clear.
  3. Remove from heat, and add the gelatin. Stir to dissolve. Cool the mixture.
  4. Pour the mixture over the strawberries and mix gently. Pour the filling into a baked pie shell

Strawberry Whipped Sensation Pie

 I'm having a slice of this Strawberry Whipped Sensation Pie that my darling granddaughter and I made the other day, when I picked her up after school.  I have more in the freezer, if you'd like to stop by.

 

 This Roy Kirkham teacup is one of my favorite summer ones.  It's called Alpine Strawberry and I love the bees that are on the cup and the saucer.


 Here's Cissy busy squeezing the lemons.  I had lots of lemons, but I would never judge, if you'd like to use bottled lemon juice.  In fact, we used a shortcut and used prepared crusts for our pies.  Making things easy for kids is a good idea.  We also doubled the ingredients and actually got three pies.  I have one to take to a friend that recently had surgery.

Strawberry Whipped Sensation Pie

I tried this as a dessert from Kraft, but decided that it was easier, and less messy in pie form. It's really a perfect, cool, easy summertime recipe.

INGREDIENTS:

  • 2 cups fresh strawberries
  • 1 can sweetened condensed milk
  • 1/4 cup lemon juice
  • 1 tub (8 oz.) frozen whipped topping, thawed and divided
  • 1 Oreo cookie crust (or make your own)

INSTRUCTIONS:

  1. Mash 2 cups berries in large bowl.
  2. Add the sweetened condensed milk, lemon juice, and 2 cups of the thawed whipped topping.
  3. Pour into the pie crust. Frost with additional whipped topping. Cover and freeze for 6 hours.
