Pumpkin Brownies




My water aerobics class recently had our Halloween party luncheon. 

I made pumpkin brownies and the cute acorn Nutter Butter treats.  I decided to have a tea on the patio with some of the leftovers before my son would eat them all.  The pumpkin head character is probably one of my favorite Halloween decorations.  Pumpkin Spice Chai tea is for sipping today.

My tea cozy was made from leftover fabric that I used on my quilt.



This quilt was made a few years ago, but forgot to put it out last year.






These acorns are so fun to make.  You just cut Nutter Butter cookies in half, dip the cut end into melted chocolate bark or Candiquick and then dip in sprinkles.  You break tiny bits of pretzels for the stem and stick it in.  Let harden on wax paper or parchment paper.





Yield: I cut 48, but you could make larger squares

Pumpkin Brownies

Pumpkin Brownies

I increased the spices a bit for this recipe. The brownies are more fudgy than cakey.

Ingredients

  • 4 large eggs
  • 2 cups sugar
  • 1 cup butter, melted
  • 1 (15 oz.) can Canned Pumpkin
  • 1 tsp. vanilla extract
  • 1 1⁄2 cups Flour
  • 2 tsp. pumpkin pie spice (original recipe was 1-1/2 tsp.)
  • 1/2 tsp. cinnamon (original recipe was 1/4 tsp.)
  • 8 oz. cream cheese, softened
  • 1⁄2 cup butter, softened
  • 2 tsp. vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. In an electric mixer’s large mixing bowl beat the eggs, add in the sugar and butter and mix well. Add the pumpkin and vanilla and mix. Add the flour and spices and mix well. Spread in a 9”x13” greased pan.
  3. Bake for 25-35 minutes or until a toothpick comes out clean. Let cool.
  4. To make frosting: In a small bowl, beat cream cheese, butter, vanilla and powdered sugar until just mixed. Frost when the brownies are cool.
  5. Cut into squares and serve.





Granddaughter Ella had her last game of her Freshman year, and her last volleyball game ever, and they won!! Ella has decided on her own that she is finished with volleyball.  In the bottom photo, grandson Caiden did an event in Fort Worth whereby he ran in six 5k races from 5:00 pm to 11:00 pm.  As you finished each 5k race, you were able to move on to the next.  Caiden finished all six races!!  My daughter Molly drove him there and they stayed in a hotel so that she didn't have to drive so far and so late at night.

  1. Kitty, I love your quilt topper with those cute fabric squares matching your tea cozy that make up your jack-o'-lantern! I don’t remember seeing it before, love the cheery contrast of the aqua. Your pumpkin head figure is adorable too. I know the gals in your class loved your brownies and cute Nutter Butter acorns. Congrats to Ella and Caiden…I can’t imagine running six 5K races in a day…what an achievement! Wishing you a wonderful week ahead ♥
