Pistachio Layered Dessert





Please join me for this springtime dessert for St. Patrick's Day! 
This layered dessert is so perfect for Spring and would be wonderful for Easter.  I have shades of green on my tea table, just like the patchwork greens in Ireland.  My daughter gave me the pitcher many years ago, and the hankie is from my little mom's collection.  



I couldn't resist this cute teapot from Target.  It's stoneware and keeps the Irish tea hot, although it's a workout to lift!



Isn't this the most darling Queen Anne teacup and perfect for St.  Patrick's Day?  



I've shared this recipe on my blog in the past, but decided it needs a re-share.

Pistachio Layered Dessert

Pistachio Layered Dessert

This is the perfect Springtime dessert, and for a crowd, just double the ingredients for a 9x13" pan.

Ingredients

  • Crust:
  • 1 1/2 cups crushed chocolate cream-filled cookies (Oreos) - about 18 cookies See NOTE
  • 3 T. butter melted
  • Cream Cheese Layer:
  • 8 oz block cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup Cool Whip
  • Pudding Layer:
  • 1 box Instant Pistachio pudding
  • 1 1/2 cups milk
  • Garnish:
  • Additional Cool Whip and Chopped Pecans, Chopped Pistachios, or chopped sliced almonds

Instructions

  1. 1. Crush cookies and mix with melted butter. Pat into the bottom of an 8 x 8" or 9 x 9" pan. Refrigerate until next steps.
  2. 2. In the bowl of a mixer, combine softened cream cheese, powdered sugar and Cool Whip using the whisk attachment. Whip until fully combined and spread over the crust.
  3. 3. In a large bowl, mix pudding mix and milk until pudding is thickened. Spread over cream cheese layer. Top with additional Cool Whip and nuts and refrigerate several hours until firm.

Notes

You could use shortbread cookies, or Golden Oreos in place of the Chocolate Oreos.

  13. That pistachio dessert is the best! I don’t think I have made that in about 20 years. I used to make it all of the time when I was newly married because it was so easy, and so good. How appropriate for St. Patrick’s Day.
