Texas Pecan Praline Muffins


Have you ever tried these decadent pecan muffins? 

I had them years ago and recently received a beautiful cookbook and the recipe was in there but without directions.  My son Tim gave me the flowers in the larger vase for Valentine's Day and they're still looking good.  My grandson Caiden, who always remembers me, gave me a  dozen roses for my birthday, and these are the ones that still  look pretty.  I thought the colors blended with my Royal Albert March trio that my friend Colleen gave me because she never used it. Molly gave me the beautiful lady head candle with the scent of Lemon Blossom and Summer Moss.  It smells so good!  After I've used it, it can be repurposed, and I'll probably use it for a a plant.  


 The flowers on this set are anemones.




Margie, from Tea In The Valley sent me these Dessert by Deb's teas.  One is Vanilla Caramel Spice Snack Cake, and the other is Banana Pineapple Hummingbird Cake.  I'm going to have the Snack Cake one with my mini muffins.  Margie could open a tea room with all the wonderful teas that she shares, and I'm always amazed at her selections.



These tiny muffins would be wonderful for a ladies luncheon or tea party.

Texas Pecan Praline Muffins

These are very rich little morsels, and are reminiscent of pecan pie! The recipe in the book stated that it made 12 mini muffins, but I'm thinking that it meant 12 regular muffins. There is no leavening agent in this recipe, and the muffins don't rise much.

Ingredients

  • 2 eggs
  • 1/2 cup flour
  • 1 cup lightly packed brown sugar
  • 1/2 cup butter melted and cooled
  • 1 tablespoon vanilla
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a mini muffin pan generously with butter.
  3. Stir together the brown sugar, flour and pecans in a bowl.
  4. Beat the butter, eggs, and vanilla together in a separate bowl, and then add the dry ingredients and mix.
  5. Spoon into the prepared pan, about 1 tablespoon for each muffin. I used my tiny scoop that holds one tablespoon. Remember that these won't rise much at all.
  6. Bake for 12-15 minutes and then let cool for a few minutes in the pan: remove by running a knife around the edge. Let cool on rack.





My family birthday celebration was at Uncle Julio's and we had the most wonderful time. They are famous for their Chocolate Pinata and my family ordered one and we devoured it!   This picture is with all four of my kids, and daughter-in-law Kristen.  Molly's Hubby couldn't make it and daughter-in-law Julie was with Avery at a volleyball tournament in Boston, Massachusetts.  Avery's team won!



This picture is with all my grandchildren and two girlfriends of the boys.  Riley is missing because he's in South Korea, and Avery was at the tournament.  


Here's the chocolate pinata which was filled with strawberries, pineapple, churros and we loved it!  Chocolate sauce and whipped cream was there for dipping.
